Amazingly fudgy Peanut Butter Chocolate Collagen Bars that are actually healthy! These chocolate collagen protein bars use a ton of collagen powder and egg whites and are sweetened with monkfruit; No sugar!

It’s been a while since I made my collagen protein brownies, and I really wanted something similar.

Revamped that recipe and turned it into these amazing rich and fudgy chocolate peanut butter layered dessert bars; High in protein from the collagen and egg whites, but still healthy and sugar free using monkfruit sweetener.

Not even kidding with the level of fudginess here; My fiancé was just at awe!

Ingredients for Peanut Butter Chocolate Collagen Bars

These extra fudgy chocolate collagen bars are made with a few healthy and simple ingredients. They’ve got no butter or oil or sugar, and really are a macro friendly collagen powder dessert recipe!

  • Unflavored Collagen Peptides needed for high protein brownies. I use the one from Further Foods (HAYLSKITCHEN gives you a discount)
  • Unsweetened Cocoa Powder, or Raw Cacao Powder (HAYLSKITCHEN.15OFF to save on Kiva Cacao)
  • Gluten Free (All Purpose) Baking Flour – or a regular all purpose flour
  • Lakanto’s Golden Sweetener – This is the Golden Monkfruuit 1:1 Sugar Substitute from Lakanto, and keeps this recipe sugar free;  (code HAYLSKITCHEN for a discount here)
  • A bit of Coconut Flour
  • Creamy Peanut Butter
  • Non-fat Greek Yogurt contributes to the oil-free part of these chocolate collagen bars
  • Egg Whites for an extra high protein collagen dessert recipe without the added fat from the yolk
  • Almond Milk or regular milk
  • Vanilla Extract
  • Baking Soda

And for the Low Fat Peanut Butter layer in these Collagen Bar:

  • Lakanto’s Peanut Butter Powder, also known as Powdered Peanut Butter. I recommend Lakanto for a sugar free version (the code HAYLSKITCHEN gives you a discount)

  • Vanilla Protein Powder– This is the replacement for sugar in these protein sandwich cookies; I used a Whey here from Protein World (code HAYLSKITCHEN gives a discount here too) 
  • Creamy Peanut Butter
  • Lakanto’s Sugar free Maple Syrup for no-sugar collagen dessert bar
    Lakanto maple-flavored syrup is sweetened with monk fruit. (code HAYLSKITCHEN gets you a discount)
  • A bit of Water

Tips to make Chocolate Collagen Powder Bars with no Protein Powder:

This recipe for chocolate protein collagen bars is extremely easy to make, but here’s some tips to get it right.

  • Grease the baking pan so the chocolate bar layer comes off easily.
  • Use drippy, creamy peanut butter so that it mixes smoothly with the rest of the wet ingredients, and does not clump.
  • Whisk the wet ingredients, don’t use a spoon so that everything mixes well; No clumps again.
  • Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter and have sugar free collagen dessert recipe.
  • Let the chocolate layer cool completely before topping, or the peanut butter layer will melt away.
  • Use whey protein powder for the peanut butter layer (not whey-caesin) for the sugar free caramel filling since it works best with these ratios. Add more water if you use whey-caesin.

Extra Tip for cutting collagen dessert bars

Use a plastic knife to cut; These collagen protein bats are quite fudgy and might stick to a metal knife when cutting.

How to Store Homemade Collagen Protein Bars

These chocolate collagen protein bars are a geat homemade snack and can be stored on the counter, in the frige or in the freezer.

Store (cooled) baked chocolate collagen bars in an airtight container on the counter for 2 days, or fridge for 1 week.

To freeze, freeze each piece individually on a baking sheet, and then transfer to freezer-safe zipper bag; Or wrap each piece in plastic wrap and place in freezer-safe zipper bag. They should keep 2-3 months.

Thaw before eating!

Alternatives for Healthy Collagen Bars Recipe

For the perfect fudgy but healthy collagen bars, I would highly suggest using the ingredients and brands I recommended. I do have some alternatives you can try, but I haven’t testing them all, so I can’t say how your recipe might turn out.

  • Whole Wheat Pastry Flour: All purpose Flour or 1:1 Gluten Free Baking Flour, in the same amount by weight not cups.
  • Lakanto’s Golden Monkfruit Sweetener: Regular sugar or coconut sugar (this won’t be sugar free though, and also higher in calories)
  • Peanut Butter: Almond Butter, Cashew Butter, or any nut or seed butter.
  • Greek Yogurt: Coconut Yogurt
  • Almond Milk: Any other milk 

Options for the peanut butter layer in these collagen snack bars

  • Peanut Butter: Almond Butter, Hazelnut Butter, Cashew Butter or Tahini; 
  • Sugar-free Maple Syrup: Regular maple syrup or Honey
  • Peanut Butter Powder: ⅓ cup Peanut Butter, but also avoid the water; Only add if needed.

Ingredients

  • Unflavored Collagen
  • Unsweetened Cocoa Powder
  • Lakanto’s Golden Sweetener
  • Whole Wheat Pastry Flour
  • Coconut Flour
  • Baking Soda
  • Creamy Peanut Butter
  • Unsweetened Almond Milk
  • Non-fat Greek Yogurt
  • Egg Whites
  • Vanilla Extract

Peanut Butter Layer:

  • Lakanto’s Peanut Butter Powder
  • Vanilla Protein Powder
  • Creamy Peanut Butter
  • Lakanto’s Maple-flavored Syrup
  • Water

Instructions

  • Preheat oven to 350°F and line an 8” x 8” brownie pan or baking dish with parchment paper.
  • In a bowl, whisk collagen powder, unsweetened cocoa powder, Lakanto’s Golden Sweetener, flour, coconut flour and baking soda.
  • In a large bowl, whisk together Peanut butter, almond milk, Greek yogurt, egg whites and vanilla.
  • Add dry mix to wet, and gently fold until combined. Batter should be slightly runny.
  • Transfer batter into pan, smoothen with a spatula or back of spoon.
  • Bake for 25-30 minutes.
    Top should be set and toothpick inserted into the center should come out mostly dry.
  • Remove from oven and let cool completely.

Peanut Butter Layer:

  • LET BOTTOM LAYER COOL FIRST.
  • Mix peanut butter powder and vanilla protein powder in a bowl.
  • Add peanut butter and maple syrup, then water (little a time) and mix.
    Add water if too thick, protein powder if too thin.
    Mixture should be like a dough, but spreadable.
  • Take a little of the mixture at a time, and spread over bottom layer.
  • Optionally top with chopped peanuts.
    Slice into bars and enjoy.

Notes

  • For extra gooey bars, remove at 25 minutes when the tester comes out slightly moist.
