One truffle is should not be a serving size for these. I would be lying if I said that's how many I had.
It was more along the lines of 3 or 4 at a time.
If you can stop at one of these protein gingerbread balls, that is some self control there!
But to be honest, it's completely okay to indulge in these little gingerbread truffles, because not only are they high protein, but also extremely low calorie and low fat. This is beacuse they're made with oat flour and raw cacao powder; No melted chocolate needed!
I'd recommend dipping them in melted white chocolate for good measure though 🙂

Use an airtight container and they should keep for a week.

Some alternate ingredients for Chocolate Protein Balls
I made these coconut flour, but you can use about ½ cup almond flour instead.
Use normal milk if you don't have a restriction that requires almond milk
Vegan protein powder might woke well too, just be sure to taste the mixture and add extra sweetener if needed.

Amazing Chocolate Gingerbread Protein Truffles (Sugar-free)
Ingredients
- ⅔ cup Chocolate Whey Protein Powder, 80g
- ¼ cup Coconut Flour, 28g
- ⅛ teaspoon Ground Ginger
- ⅛ teaspoon Cinnamon
- 3 tablespoon Almond Milk, 45ml
- ½ tablespoon Molasses, 10g
- For coating: 2 teaspoon Cocoa Powder

Instructions
- Combine protein powder, coconut flour, ginger and cinnamon in a bowl.
- Pour in the molasses and milk (little at a time) and mix to form a dough. It might look too dry at first, but don't add more liquid; it will combine.
- Spoon out 1-2 tablespoons of mixture at a time and place on a parchment lined baking sheet. You should have 7 portions.
- Freeze for about 10 minutes. Roll into balls using clean hands, and then in cocoa powder to coat.Enjoy!
