The Secret to the Perfect Texture
People always ask me "how to make protein balls that aren't sticky" or overly dry. The secret is all in the type of protein powder you use!
For this recipe, we are using a whey-casein blend for the vanilla protein. Casein absorbs significantly more liquid than pure whey does. This is exactly what gives these high protein low carb energy ballss their thick, edible "cookie dough" texture instead of making them a sticky mess or a dry, crumbly powder. I use Quest Nutrition for my recipes.
It's the perfect low carb and keto protein balls recipe with protein powder having only 2.7g carbs and 1.6g fiber! No oats needed 🙂

Ingredients & Simple Substitutions for Low Carb Protein Baklls
These no bake low carb protein balls use just 5 simple base ingredients:
- Vanilla Protein Powder (Whey-Casein Blend): As mentioned above, this is crucial for that perfect doughy texture! (Examples: Quest Nutrition or PEScience).
- Unflavored Protein Powder (Whey): Helps bulk up the balls and adds extra protein without making them overly sweet.
- Sub: You can use more vanilla protein if you prefer a sweeter bite, or extra coconut flour.
- Peanut Butter Powder: Gives that delicious roasted peanut flavor with a fraction of the fat and calories of regular peanut butter.
- Sub: Use natural peanut butter or any other nut butter. But also reduce the amount of milk (add little at a time until you get the desired texture).
If you are looking for keto protein balls without peanut butter, simply swap this out for almond butter powder!
- Sub: Use natural peanut butter or any other nut butter. But also reduce the amount of milk (add little at a time until you get the desired texture).
- Coconut Flour: Highly absorbent and keeps the carbs super low.
- Sub: Almond flour, but you will need to use about twice as much since it doesn't absorb liquid the same way.
- Almond Milk: To bring the dough together.
- Sub: Soy milk, cashew milk or any non-dairy or regular milk of choice.
- Optional Coatings: Sugar-free sprinkles or melted sugar-free chocolate for dipping!

Instructions: How to Make Keto Protein Balls with Protein Powder
You have a really easy no bake recipe here that comes together in 5 mins!
Step 1: Mix the Dry Ingredients In a medium mixing bowl, whisk together your dry ingredients: the vanilla protein powder, unflavored protein powder, peanut butter powder, and coconut flour. Making sure these are well combined first prevents any powdery clumps later!
Step 2: Form the Dough Pour your almond milk a little a time into the dry mixture. Use a silicone spatula or a spoon to mix everything together until a thick, cohesive dough forms.
Taste for sweetness and add stevia or erythritol sweetener and vanilla extract if needed.

Step 3: Roll into Balls Scoop out the dough and use your hands to firmly roll it into 10 evenly sized balls. (Because we used that whey-casein blend, the dough shouldn't stick to your hands!)
Step 4: Add a Fun Coating (Optional) If you are feeling fancy, roll the protein balls in some sugar-free sprinkles or dip them into melted sugar-free chocolate. If you use chocolate, just let them sit on a piece of parchment paper for a few minutes until the chocolate sets.
(Recommended) Step 5: Chill in the fridge for around 30 minutes.

Tips for the Best Protein Bites
- Chill Before Eating: While you can eat these immediately, I highly recommend popping these energy bites them in the fridge for at least 30 minutes. They firm up nicely and taste exactly like chilled cookie dough!
- Add the Milk Slowly: Depending on the exact brands of protein powder you use, you might need slightly more or less liquid. Start with a little less almond milk, and add a splash more if the dough is too crumbly to roll.
- Make a Double Batch: These can disappear fast, so d the ingredients and keep a stash in your fridge for easy snacking all week long!:)
Storage Options
- Fridge: Store your protein balls in an airtight container in the refrigerator for up to a week.

This recipe was fireee. I didn’t coat the balls in chocolate and don’t think it was needed either. The flavor was on point and was so quick to assemble
