The Best Healthy Protein Zucchini Bread (Actually Moist!)

I first published this recipe in 2021. It was good, but it alsohad a flat, matte top that looked like a regular healthy loaf on the internet. It also packed in a lot of zucchini which gave it a little odd color now that I think about it.

Then someone on Instagram posted a zucchini bread with a crackly, sugared crust, and I could not stop thinking about it. So I pulled the old recipe out and decided to revamp it now in 2026.

The first loaf rose beautifully when I pulled it out of the oven and I was so excited, but it sank down the middle when it cooled. It was quite sad.
Three things were wrong: too much baking powder, not enough flour, and zucchini I hadn't squeezed hard enough. I also kept opening the oven to check, which did not help either. I fixed all four at once for round two, which is terrible testing practice, but thanfully it worked!

The key for that crackly top though - turbinado sugar sprinkled over the batter before it bakes. It worked perfectly the first time. The second time I slid the pan into the oven and realized I'd forgotten the sugar. I didn't want to pull it back out (even though it'd only been like 3 minutes) so I reached my in to sprinkle it on. Now I have a small burn on my knuckle as a souvenir, lol.

Would recommend the sugar. Would not recommend my method.

Ingredients for High Protein Zucchini Bread with Greek Yogurt

Simple ingredients only for this healthy zucchini bread; the yogurt and applesauce bring the moisture oil normally would, and there's two protein powders replacing the sugar and part of the flour.

  • Fresh Zucchini
    • TIP: wrap the shreds in a paper towel and wring out the excess moisture. Zucchini is about 95% water, and whatever stays in, the loaf has to bake off.
  • Flour - plain all purpose flour, whole wheat pastry flour or 1:1 gluten-free baking flour, matched by weight, not by cup. Flours don't swap evenly by volume.
  • Vanilla Whey-Casein Protein Powder - adds the protein and the sweetness, since there's no sugar in the batter. Quest Nutrition is the one I use.
    • TIP: the casein matters; straight whey isolate bakes drier and tighter.
  • Unflavored Plant-Based Protein Powder - replaces part of the flour, which is where the low calorie and low carb math comes from. I use the vegan protein from KOS.
    • Sub: more flour, but reduce the applesauce to 2 tbsp.
  • Nonfat Greek Yogurt - moisture and protein, and what makes this a Greek yogurt zucchini bread rather than an oil-based one.
    • Sub: coconut yogurt.
  • Unsweetened Applesauce - replaces most of the fat.
    • Sub: mashed banana or pumpkin puree. Banana flavore may come through, so opt for pumpkin if that is an issue.
  • Eggs - needed for structure and lift. I haven't tested flax eggs here, so I can't say how they'd work here.
  • Oil - one tablespoon of light olive oil, canola oil, vegetable oil or melted coconut oil purely for tenderness and the moist texture.
    • Sub: melted butter will also work.
  • Vanilla Extract - stops the protein powder from tasting like protein powder.
  • Cinnamon - the warm spices do real work here.
    • TIP: a pinch of nutmeg or cardamom alongside makes this taste like a bakery loaf instead of a protein loaf.
  • Baking Powder and Baking Soda - measure carefully. Too much baking powder is part of what sank my first loaf.
  • Orange Zest - optional, and highly recommended
  • Turbinado Sugar - for the crackly top. It sits on the surface instead of dissolving in, so the crunch costs very little sugar.

Making It Gluten-Free

Swap the all-purpose for a 1:1 gluten-free baking flour, matched by weight. That's the only change - everything else is already gluten-free. I made it this way for years.

Making It Dairy-Free

Coconut yogurt in place of the Greek yogurt, and a vegan protein powder in place of the whey-casein. Plant-based protein powders bake drier, so add a splash of milk if the batter goes past thick into stiff. The eggs mean it still isn't vegan.

Keeping It Sugar-Free

Use a protein powder sweetened with stevia or monk fruit, skip the honey at the taste step, and leave the turbinado off. A plain slice then has 1.8g of sugar, all from the zucchini, yogurt and applesauce.

How to Make Protein Powder Zucchini Bread

Prep the pan: Oven to 350°F, loaf pan lined with parchment, overhang on the long sides so you can lift the loaf out later.

Shred and squeeze: Grate the zucchini fine using a box grater, wrap it in a paper towel, wring out the excess moisture. Do this properly.

Whisk the dry ingredients: Flour, both protein powders, cinnamon, baking powder, baking soda and zest. A separate bowl spreads the leaveners evenly before they hit liquid.

Whisk the wet ingredients: Greek yogurt, applesauce, eggs, oil and vanilla in a smaller bowl, until smooth. Make sure this mix is at room temperature; Microwave it for 10-15 seconds until it is no longer cold.

Combine gently: Pour the wet mix into the dry, and fold until almost combined, then fold in the zucchini until distributed. The batter will be very thick - closer to a stiff muffin batter than a pourable one. That's what you're looking for.

Note: Over-mixing from here tightens the protein powder, and no baking time fixes a rubbery loaf.

Taste it: Protein powders vary wildly in sweetness. If the batter tastes flat, add in a pinch of stevia or a tablespoon of honey and fold

Spread and top: Pour the batter into the pan, spread level, and sprinkle turbinado across the surface - while the pan is on the counter.

Bake and tent: 55-60 minutes, foil tent at 30 minutes so the top stops at golden. Leave the door shut until at least 50 minutes have passed.
When done, a toothpick or sharp knife inserted into the middle should come out clean.

Cool completely: Cool the loaf for 15 minutes in the pan, then let the bread cool on a rack about 40 more. Slicing a warm protein zucchini loaf drags and tears it; the crumb sets as it cools.

Tips for Moist Healthy Zucchini Bread with Protein Powder

This protein powder zucchini bread is really easy to make, but baking with protein powder can get tricky; Here's some tips for the perfect zucchini bread!

  • Squeeze the zucchini harder than feels reasonable. Use a couple of sheets of paper towel and both hands. Zucchini has a lot of water and the excess moisture is the biggest reason these loaves sink.
  • Use melted coconut oil
    You want to be able to whisk it completely into the wet ingredients; Microwave to melt if needed.
  • Use room temperature Yogurt, Milk and Eggs
    Microwave these too for about 5 seconds if you took them out of the fridge, otherwise they will make the coconut oil harden.
  • Whisk wet ingredients well to prevent any chunks of yogurt in the batter.
  • Don't over-mix the wet and dry mixture or the loaf will be too dense and gummy because protein powder can make a batter tough.
  • The turbinado goes on before baking. It needs oven heat to crust. Sprinkled on afterward, it's just a loaf with sugar on it.
  • Foil tent at 30 minutes. Protein powder browns faster than flour, so the top darkens well before the center sets.
  • Stop opening the oven. I checked mine constantly on round one, and the temperature drop does a rising loaf no favors. Wait until 45 minutes.

Storage

This protein zucchini bread recipe keeps well - plan for leftovers, though the turbinado top may soften in the refrigerator past a day or two.

  • Countertop: Up to 3 days in an airtight container.
  • Refrigerator: Up to 1 week in the fridge an airtight container.
  • Freezer: Up to 3 months. Slice first, wrap individual slices in plastic wrap, then bag them so you can pull one at a time. The whole loaf freezes too - thaw completely before slicing.

Reheat: Warm for about 10-12 seconds in the microwave before serving.

Variations

  • Muffins: Divide the batter into 10-12 muffin pans (filling ⅔ way to the top) and bake about 18-20 minutes.
  • Chocolate chip: Fold in sugar free chocolate chips like Lily's.
  • Blueberry: A reader, Mollie, used fresh blueberries and low sugar blueberry Greek yogurt instead of plain. It does sound like a lovely zucchini bread for spring!
  • Walnut or pecan: Add in a handful of walnuts (like another reader did) or pecans (this would be my choice!)

FAQ

Why did my protein zucchini bread sink in the middle?

Four usual culprits for a zucchini beard that deflates: too much baking powder (it rises fast and collapses with nothing holding it up), not enough flour or zucchini that wasn't squeezed dry enough, which leads to too much moisture in the batter. Opening the oven too early or repeatedly and letting the heat out is another reason.

How much protein is in a slice of this zucchini bread?

10g of protein per slice at 125 calories, from a 10-slice loaf - about a third of the calories and three times the protein of a bakery slice.

Can you taste the zucchini in protein zucchini bread?

No. Shredded fine and squeezed out, zucchini serves as moisture, not flavor, and the cinnamon and vanilla cover the rest. A reader once told me she couldn't taste it at all, the highest compliment available to a vegetable loaf.

Can I make this zucchini bread without oil?

Yes. There's only a tablespoon in it to begin with, and the yogurt and applesauce already do most of the moisture work. Leaving it out gives a slightly firmer crumb, but you could add in an extra tablespoon of either applesauce or yogurt to make up.

Is this a low carb zucchini bread?

Low-ish, not keto. A slice has 14.3g carbs and 1.4g fiber - well under a standard zucchini bread, but not low enough that I'd call it keto in good conscience.

What protein powder works best for zucchini bread?

A whey-casein blend for the sweetener half - I use Quest Nutrition - and unflavored plant protein for the rest. Straight whey isolate bakes drier and tighter.

  • 1½ cup Shredded Zucchini, 180g, 1 medium
  • 1 cup + 2 tablespoon Flour, 135g
  • ½ cup Vanilla Whey-Casein Protein Powder, 45g
  • ½ cup Unflavored Plant-Based Protein Powder, 45g, see post for subs
  • 1½ teaspoon Cinnamon
  • ¾ teaspoon Baking Powder
  • ½ teaspoon Baking Soda
  • Optional: zest of 1 Orange
  • ⅔ cup Nonfat Greek Yogurt, 150g, room temperature
  • ¼ cup Unsweetened Applesauce, 60g
  • 2 Eggs, room temperature
  • 1 tablespoon Oil
  • 1 teaspoon Vanilla Extract, 5ml
  • Optional: 1-2 tablespoon Turbinado Sugar, for topping

Instructions

  • Preheat oven to 350°F and line an 8" x 4" loaf pan with parchment paper, leaving overhang on the long sides.
  • Finely shred the zucchini on a grater, then wrap it in a paper towel and squeeze out as much excess moisture as you can. Water left in the zucchini is water the loaf has to bake off, and it's a main cause of a sunken center.
  • In a large bowl, whisk the dry ingredients: flour, vanilla protein powder, unflavored protein powder, cinnamon, baking powder, baking soda and the orange zest if using.
  • In a small bowl, whisk together the Greek yogurt, applesauce, eggs, oil and vanilla extract.
  • Add the wet mix to the dry and gently fold until almost combined.
  • Add the zucchini and fold until just combined. The batter will be very thick. Do not over-mix - protein powder and the gluten in the flour will both toughen and make the bread dense.
  • Taste the batter. If it needs more sweetness, add a pinch of stevia or a tablespoon of honey or maple syrup.
  • Transfer the batter to the pan and spread it evenly. Sprinkle the turbinado sugar over the top.
  • Bake for 55-60 minutes, covering with a foil tent after 30 minutes. A toothpick or tester knife inserted into the center should come out dry. Try not to open the oven before the 45-minute mark.
  • Cool in the pan for 15 minutes, then lift out using the lining. Let the bread cool completely on a wire rack, about 40 minutes, before cutting into slices.

    Okay this bread is goals! I used walnuts (my favorite nuts btw) and every time I get one in one of the bites I get excited haha. And I can't even taste the zucchini so double goals lol
