Okay I was actually going for a flourless protein brownie here, but ended up with this contraption. Accidentally underbaked it and got mad, but as soon as I broke into it, I knew it was perfect.

Come on – a half baked brownie with that rich fudginess and protein!

Ingredients for Half Baked Protein Fudge Brownie

This single serve protein fudge brownie is made with a few simple and healthy ingredients, and has no butter or oil and no sugar either! 

  • Chocolate Protein Powder for high protein brownie that’s also sugar free.
    I used ProteinWorld Whey, but the ProteinWorld Slender Blend is another great option. Code HAYLSKITCHEN gets you a discount on both.
    A third alternative would be Quest.
  • Unsweetened Cocoa Powder or Cacao Powder
  • Coconut Flour
  • Egg Whites for extra protein
  • Unsweetened Almond Milk
  • A bit of Vanilla Extract
  • Baking Powder

Tips to make Half Baked Protein Brownie in a Mug

This chocolate fudge half baked protein brownie really is an easy one and made in a mug or ramekin, but make sure you do all of this stuff to get is perfect.

  • Grease the ramekin! You want the brownie to come off easily.
    Use an oven-safe mug if you need.
  • Don’t over-mix the batter!
    Make sure you gently fold the dry mix into the wet to combine them.
    If you over-mix it,  protein powder will make your protein brownie tough, dense and gummy.
  • Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter.
  • Don’t overbake the brownie. The top will should be just cooked. It might look soft, but will harden when it cools a bit.
    It will continue to cook when out, and you want the proper fudge brownie center.

Alternates for this Healthy Chocolate Fudge Protein Brownie

I recommend making this a chocolate fudge protein brownie using the ingredients and products listed since it gives the best results.

If you need other options for the flours and such, here’s some alternatives for a healthy protein powder brownie for one:

  • Chocolate Protein Powder: Use Vanilla
  • Coconut flour: Try using about 3 tablespoon of Almond Flour
  • Egg Whites: 2 tablespoon aquafaba (chickpea liquid). I haven’t given this a try yet though.
  • Almond Milk: Any other milk

A Vegan Gooey Protein Brownie Recipe

This gooey protein brownie recipe has no butter or milk and can easily be made Vegan too.

For the perfect Vegan protein fudge brownie, make sure you use a plant based protein powder and aquafaba.

Ingredients

  • 1 scoop Chocolate Protein Powder, 30g, ⅓ cup
  • 2 tablespoon Unsweetened Cocoa Powder, 10g
  • 1 tablespoon Coconut Flour, 7g
  • ½ teaspoon Baking Powder
  • 3 tablespoon Unsweetened Almond Milk, 45ml
  • 1½ Liquid Egg White, 45g, 3 Tbsp
  • ¼ teaspoon Vanilla Extract

Optional:

  • Stevia Powder/ Zero Calorie 1:1 Monkfruit Sugar Replacement (to taste)
  • Chopped Chocolate or Chocolate Chips, Sugar free recommended below

Instructions

  • Preheat oven to 350°F and lightly grease a 1 cup ramekin.
  • In a bowl, whisk chocolate protein powder, cocoa powder, coconut flour and baking powder.
  • Add almond milk, egg white and vanilla, and stir until combined. Batter should be smooth.
  • Taste batter and add sweetener if needed.
  • Pour batter into ramekin and top with chopped chocolate.
  • Bake for 12-14 minutes. Top should be mostly set, but still slightly wobbly. It will harden when cool.
  • Let cool for a few minutes and enjoy!

  • Taste the batter and see if you need some extra sweetener; I’d recommend stevia if needed.

    “Oh man” literal first words as I dug my spoon in that gooey center and took a bite. May or may not have eaten the sides first and saved the center for the last after that initial bite ??
