Surprising Protein Eggnog Bars with all the egg nog and nutmeg flavor, but actually good for you! These healthy eggnog bars use protein powder and almond milk nog for a low sugar, low fat and Vegan recipe.

Truth here; This was actually a recipe that failed a bit. I was going for an eggnog cake, but they just collapsed and got dense.

Kinda got mad for a bit, but tasted them and … soft and rich and dense and spot on eggnog flavor; Perfect for a protein bar!

Ingredients for Protein Eggnog Bars

These protein eggnog bars are made with a few healthy ingredients, and have no eggs, no oil, no sugar and gluten free too. An overall great eggnog protein dessert!

  • Vanilla Protein Powder needed for high protein blondies and also replaces most of the ‘sugar’.
    I used half whey-caesin Vanilla protein powder from MacroSupps.
    You could try the one from Quest Nutrition here too (its what I usually use).
  • Whole wheat pastry flour for that lightness of the all-purpose flour, but with the nutritious benefits of whole grains
  • Peanut Butter Powder, also known as Powdered Peanut Butter. I recommend Lakanto for a sugar free version (the code HAYLSKITCHEN gives you a discount). Or you could use the one from PbFit too.
  • 1:1 Zero Calorie Sugar Substitute – I use Lakanto, to keep this recipe sugar free;  (code HAYLSKITCHEN for a discount here too.
  • Non-fat Greek Yogurt contributes to the oil-free part of these high protein low calorie cake blondies since it adds the moisture, and also extra protein 
  • Eggnog Almond Milk or regular or light Eggnog
  • A bit of creamy Tahini
  • Cinnamon and Nutmeg
  • Baking Soda

And then for the Eggnog glaze:

  • Eggnog again
  • More Vanilla Protein Powder

Tips for perfect Protein Powder Eggnog Bars

This protein powder eggnog bars recipe is really easy to make, and here’s some pointers to get it right.

  • Use slightly room temperature eggnog and yogurt;
    This is so the wet ingredients and dry ingredients can mix well.
  • Room temperature drippy tahini so it mixes well too and does not clump.
  • Don’t over-mix the batter!
    Make sure you gently fold the dry mix into the wet to combine them.
    If you over-mix it, the whole wheat flour or protein powder will make the healthy eggnog squares tough, dense and gummy.
  • Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter and have low sugar eggnog dessert recipe.

How to store Protein Eggnog Squares?

This high protein eggnog squares recipe keeps well for a meal prep dessert or post workout snack and is freezer friendly too!

Store healthy eggnog bars at room temperature in an airtight container for 1-2 days or in the fridge for a week.

To freeze eggnog protein blondies, individually wrap each eggnog blondie square in plastic wrap and place in freezer-safe zipper bags or air tight container; The egg nog bars should keep for 2-3 months.

Alternatives for Healthy Eggnog Bars

I made these high protein healthy eggnog with the ingredients and particular brands of protein powder, and know they turn out amazing this way.

I do have some alternatives you can try, but I haven’t testing them all so I can’t say how your recipe might turn out. I’d love to know if you do.

  • Whole Wheat Pastry Flour: All purpose flour, 1:1 gluten free baking flour or Whole Wheat Pastry Flour; The same amount by weight
  • 1:1 Zero Calorie Sugar Replacement: Regular confectioners sugar or coconut sugar (this won’t be sugar free though, and also higher in calories)
  • Greek Yogurt: Coconut Yogurt
  • Eggnog Almond Milk: Any other eggnog; Regular, light or low fat work too 
  • Tahini: Almond Butter, Sunflower Seed Butter, Hazelnut Butter; I wouldn’t recommend peanut butter since the flavor is quite strong.

To make Vegan Egg Nog Bars

For a high protein healthy Vegan eggnog bar recipe, use coconut yogurt in place of Greek Yogurt also a plant based protein powder.

ProteinWorld has a Vegan protein blend that could work well here (HAYLSKITCHEN for the discount here too).

I haven’t tried pea protein or other plant based ones, so I can’t say how those would work.

Ingredients

  • ½ cup + 2 Tbsp Whole Wheat Pastry Flour, 75g, see post for sub
  • ⅔ cup Vanilla Protein Powder, 60g, about 2 scoops
  • ¼ cup Peanut Butter Powder, 24g
  • 5 tablespoon Zero Calorie 1:1 Sugar Replacement, 60g
  • ⅔ teaspoon Nutmeg
  • ⅔ teaspoon Baking Soda
  • 1¼ cup Non-fat Greek Yogurt, 281 g
  • 9½ tablespoon EggNog, 143ml, Almond Milk-based recommended
  • 1 Tbsp + 1 teaspoon Tahini, 20g

Icing:

  • 1 tablespoon Eggnog, 15ml
  • ½ scoop Vanilla Protein Powder, 15g

Instructions

  • Preheat oven to 350°F and line an 8” x 8” baking dish with parchment paper.
  • In a bowl, whisk whole wheat pastry flour, vanilla protein powder, peanut butter powder, zero calorie sugar replacement, nutmeg and baking soda.
  • In a large bowl, whisk together Greek yogurt, eggnog and tahini.
  • Add dry mix to wet, and gently stir until just starting to mix.
    DO NOT OVER-MIX or protein powder will make the bars gummy.
  • Transfer to baking pan and bake for about 22-25 minutes.
    Top should be set and toothpick inserted into the center should come out dry.
  • Remove from oven and let cool completely.
    Slice into 16 bars.

Icing:

  • Stir protein powder and eggnog in a bowl, then drizzle on bars.

  • I used dairy free Eggnog made from Almond Milk.
