I came across a chocolate self saucing pudding recipe on Instagram a couple of years ago, and after a failed attempt, never tried it out again. Popped back onto my mind right now and I had to go for it.

What a proper indulgence here with that layer of rich chocolate pudding on top of the soft chocolate cake – and that too healthy and sugar free and high protein too!

Ingredients for Healthy Chocolate Self-Saucing Pudding

This single serve healthy chocolate self saucing pudding is made with a few simple and clean ingredients, and has no butter or sugar! 

  • Chocolate Protein Powder for high protein self saucing pudding that’s sugar free.
    I recommend Quest Nutrition; It’s a whey-casein and works best for baking.
  • Whole Wheat Pastry Flour – or a regular all purpose flour
  • Unsweetened Cocoa Powder or Cacao Powder
  • A bit of Greek Yogurt to add moisture since there’s no butter or oil in here
  • Egg Whites for extra protein
  • Unsweetened Almond Milk
  • A bit of Vanilla Extract
  • Baking Powder

If you need to add more sweetness, Stevia Powder or Zero Calorie Sugar Substitute; I use Lakanto, to keep this raw protein brownie batter recipe sugar free; (code HAYLSKITCHEN for a discount here too)

And for the sugar-free pudding topping:

  • Unsweetened Cocoa Powder

  • Hot Water

Tips to make High Protein Chocolate Self-saucing Pudding

This protein chocolate self saucing pudding really is an easy one and made in a mug or ramekin, but make sure you do all of this stuff to get is perfect.

  • Grease the ramekin! You want the dessert to come off easily from the dish.
    Use an oven-safe mug if you need.
  • Don’t over-mix the batter!
    Make sure you gently fold the dry mix into the wet to combine them.
    If you over-mix it, the protein powder will make your protein lava cake tough, dense and gummy.
  • Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter.
  • Sprinkle topping evenly over surface of batter so it doesn’t cluster.
  • Use back of spoon to pour hot water so it falls lightly on, and doesn’t make depressions in the batter, giving a smooth surface.
  • Don’t overcook. The top will should be soft slightly jiggly in the center (about half of it) and cooked all around.
    It will continue to cook when out, and you want the proper molten lava center.

Alternates for this Chocolate Self-Saucing Pudding with Protein Powder

I recommend making this a chocolate self saucing pudd using the ingredients and products listed since it gives the best results.

If you need other options for the flours and such, here’s some alternatives for a healthy protein powder self saucing pudding for one:

  • Chocolate Protein Powder: Use Vanilla; You might need another teaspoon of Cocoa powder though.
  • Whole Wheat Pastry Flour: All purpose flour, 1:1 gluten free baking flour or Almond Flour in the same amount by weight not cups.
    Update: A reader has confirmed that Almond flour works here.
  • Egg Whites: 2 tablespoon aquafaba (chickpea liquid). I haven’t given this a try yet though.
  • Greek Yogurt: Coconut Yogurt, Pumpkin Puree, Mashed Banana
  • Almond Milk: Any other milk
  • 1:1 Zero Calorie Sugar Replacement: Regular confectioners sugar or coconut sugar (this won’t be sugar free though, and also higher in calories)

A Vegan Self Saucing Pudding Recipe

This protein self saucing pudding has no butter or milk and can easily be made Vegan too.

For the perfect Vegan self saucing pudding recipe, make sure you use a plant based protein powder, aquafaba instead of egg-whites and coconut yogurt instead of Greek yogurt.

Ingredients

  • ¼ cup Chocolate Protein Powder, Whey-casein, 22g
  • 2 tablespoon Unsweetened Cocoa Powder, 10g
  • 1½ tablespoon Whole Wheat Pastry Flour, 11g, see post for subs
  • ¼ teaspoon Baking Powder
  • ¼ cup Unsweetened Almond Milk, 60ml
  • 1 tablespoon Greek Yogurt, 14g
  • 1 Egg White, 31g, 2 Tbsp
  • ¼ teaspoon Vanilla Extract

Topping:

  • 2 teaspoon Zero Calorie 1:1 Sugar Replacement, 8g
  • ¾ teaspoon Unsweetened Cocoa Powder, 1-2g
  • 1½ tablespoon Hot Water

Instructions

  • Preheat oven to 350°F and lightly grease a 1 cup ramekin.
  • In a bowl, whisk flour, chocolate protein powder, cocoa powder and baking powder.
  • Add almond milk, egg white, yogurt and vanilla, and stir until combined.
    Batter should be smooth.
    Taste batter and add sweetener if needed.
  • Pour batter into mug.

For topping:

  • Mix cocoa powder and sweetener in a bowl.
    Sprinkle evenly over batter.
  • Pour water over mixture using back of spoon to spread evenly.
  • Bake for 11-12 minutes. Top should be mostly set, but still slightly wobbly. It will harden when cool.
    Let cool for a few minutes and enjoy!

    I just made this pudding for an after-dinner dessert and it was so good! I added a cosmic amount of sweetener just because I personally have a strong sweet tooth, and the final product turned out so so decadent; it was smooth, rich, and the combined texture of the outer coating and the pudding interior was *chef’s kiss.* It didn’t taste like protein at all and it was super filling! Though I do kind of wish I stirred the batter a little bit more to eliminate all protein powder chunks, haha—I was super scared to over-mix, but I think I ended up under-mixing as a result, but this didn’t subtract from how tasty the pudding was. This is my first recipe of yours that I’ve tried, and it’s safe to say that I’m *very* excited to try out some more <3
