After getting some of the new seasonal Pumpkin Spice (white chocolate) Chips from Lily’s, I really just wanted to go for some halloween dessert; This black and orange combination here – with the flavors too – was exactly what I needed.

This easy halloween brownie is a quick-fix healthy dessert for the halloween vibes, but keeping it clean too.

Ingredients for Halloween Protein Fudge Brownie

This single serve healthy Halloween Protein Fudge Brownie is made with a few simple and clean ingredients, and has no butter or sugar! 

  • Chocolate Protein Powder for a high protein halloween fudge browie that’s sugar free.
    I recommend Quest Nutrition; It’s a whey-casein and works best for baking.
  • Coconut Flour
  • Black Cocoa Powder or Regular Cacao Powder; I use the one from Weirdo Good.
  • Egg Whites for extra protein
  • Unsweetened Almond Milk
  • A bit of Vanilla Extract
  • Baking Powder

If you need to add more sweetness, Stevia Powder or Zero Calorie Sugar Substitute; I use Lakanto, to keep this raw protein brownie batter recipe sugar free; (code HAYLSKITCHEN for a discount here too)

And for the halloween brownie idea vibe:

  • Pumpkin Spice White Chocolate Baking Chips from Lily’s! You can use peanut butter chips or butterscotch chips for the color contrast though.

Tips to make Halloween Fudge Brownie with Protein Powder

This protein powder halloween brownie recipe really is an easy one and made in a mug or ramekin, but make sure you do all of this stuff to get is perfect.

  • Grease the ramekin! You want the dessert to come off easily from the dish.
    Use an oven-safe mug if you need.
  • Don’t over-mix the batter!
    Make sure you gently fold the dry mix into the wet to combine them.
    If you over-mix it, the protein powder will make your protein brownie tough, dense and gummy.
  • Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter.
  • Don’t overcook. The top will should be soft in the center (about half of it) and cooked all around.
    It will continue to cook when out, and you want the proper molten lava center.

Alternates for this Healthy Halloween Brownie Dessert

I recommend making this healthy halloweeen fudge brownie for your next dessert using the ingredients and products listed since it gives the best results.

If you need other options for the flours and such, here’s some alternatives try:

  • Chocolate Protein Powder: Use Vanilla; You might need another teaspoon of Cocoa powder though.
  • Black Cocoa: Just regular cocoa powder
  • Coconut Flour: 3 tablespoon Almond Flour
  • Egg Whites: 3 tablespoon aquafaba (chickpea liquid). I haven’t given this a try yet though.
  • Almond Milk: Any other milk

An Easy Vegan Halloween Protein Fudge Brownie

This halloween themed brownie can easily be made Vegan with the right ingredients; Use a plant based protein powder, aquafaba instead of egg-whites, and dairy-free chips.

Ingredients

  • ¼ cup Chocolate Protein Powder, Whey-casein, 22g
  • 2 tablespoon Black Cocoa Powder, 10g
  • 1 tablespoon Coconut Flour, 7g
  • ½ teaspoon Baking Powder
  • 3 tablespoon Unsweetened Almond Milk, 45ml
  • 1½ Egg White, 31g, 3 Tbsp
  • ¼ teaspoon Vanilla Extract
  • 2 teaspoon Pumpkin Spice White Chocolate or PB Chips, 11g, Sugar free recommended below

Instructions

  • Preheat oven to 350°F and lightly grease a 1 cup ramekin.
  • In a bowl, whisk chocolate protein powder, black cocoa powder, cocoa powder and baking powder.
  • Add almond milk, egg whites and vanilla, and stir until combined.
    Batter should be smooth.
    Taste batter and add sweetener if needed.
  • Add most pumpkin spice chips, reserving few for the top.
  • Pour batter into mug, top with remaining chips.
  • Bake for 11-12 minutes. Top should be mostly set, but still slightly wobbly. It will harden when cool.
  • Let cool for a few minutes and enjoy!

  • Taste the batter and see if you need some extra sweetener; I’d recommend stevia if needed.
