  • Whole Wheat Pastry Flour – its light like all-purpose flour, but has benefits of whole grain.

  • Unflavored Protein Powder for extra protein. I used Quest Nutrition Multipurpose Protein. 
  • An Egg
  • Almond Milk
  • Baking Powder

  • Blueberries
  • Bacon – Sub with turkey bacon for a less fat option.

How to Make Savory with Protein Powder

Here’s how you make these blueberry and bacon savory pancakes with protein powder!

  1. Cook the bacon: Cook bacon to your desired crispiness and crumble into small pieces.
  2. Combine ingredients in one bowl  – the flour, vanilla protein powder, baking powder, egg, yogurt and almond milk.
  1. Make pancake batter – whisk until just combined. Gently fold in blueberries.
  1. Heat nonstick pan or griddle on medium-low, and grease with cooking spray.
  1. Scoop out about ¼ cup mixture at a time onto pan; Pipe a swirl in middle (dip the tip inside a little so batter goes in deep)
    Cook until edges are dry and top has bubbles. Flip and cook the other side; About 2 minutes each side.
  2. Assemble: Top pancakes with crumbled bacon and additional blueberries, if desired. Serve with maple syrup or your favorite pancake topping.

This recipe for blueberry and bacon pancakes really is a keeper! Here’s some tips to get the perfect fluffy pancake stack!

  1. Cook your bacon in the oven so they turn out crispy and FLAT (instead of curled up).
  2. Let the bacon cool before mixing into the pancake batter.
  3. Don’t over-mix the pancake batter; Some clumps of flour are okay. If you mix too much, the pancakes won’t fluff up.
  1. Use a nonstick pan so the protein blueberry bacon pancakes don’t stick to the pan.
  1. Medium-low heat to prevent the healthy blueberry bacon pancakes from burning before they cook though.
  1. Grease the pan well between each pancake batch so that the pancakes don’t stick to the pan.
  1. Let the sides dry out, top form bubbles before flipping a sign that the bottom is also cooked completely; This way you won’t have to double flip later.

If you don’t have all the ingredients listed, use the following ingredient swaps for your healthy blueberry bacon pancakes:

  • Flour alternatives: In place of Whole Wheat Pastry Flour, Use all-purpose flour or Gluten-free baking flour.
    Replace in the same amount by weight not cups
  • Unflavored Protein Powder: Use ⅓ cup flour but also reduce the milk to 12 Tbsp. 
  • Bacon: Use plant based bacon or turkey bacon.

Ingredients

  • ⅔ cup Whole Wheat Pastry Flour, 80g
  • ⅔ cup Vanilla Protein Powder, Whey-casein, 60g
  • ⅓ cup Unflavored Protein Powder, Whey-casein, 30g
  • 2½ teaspoon Baking Powder
  • 1 cup Almond Milk, 240ml
  • 1 Egg
  • ⅔ cup Blueberries, 100g
  • 4 slices Bacon

Instructions

  • Cook bacon and let cool.
    Chop into pieces.
  • In a large bowl combine flour, vanilla protein powder, unflavored protein powder and baking powder.
  • Add egg and milk and whisk to form thick batter; Small clumps of flour are okay.
  • Add in the blueberries and bacon and fold.

Make Pancakes:

  • Heat a nonstick griddle or pan on medium-low (lightly grease with oil spray) and scoop out about ⅓ cup batter on it.
  • Cook for about 2-3 minutes until edges are slightly dry and bubbles start to appear on top.
    Flip and cook other side for 1-2 minutes.
  • Repeat with remaining batter (makes about 9 pancakes).
