A little backstory - I used black cocoa to just try a fun Oreo concept for a ninja creami ice cream, but oh man that was the richest creami I'd made! I was all set to finalize that Oreo version, but then I realized Halloween is just around the corner, and what better way to create a festive ice cream than use that black cocoa base?!
Worked out perfectly well because I also had candy corn lying in my pantry from last year that I never used, haha. Well, now you have the perfect and best spooky Halloween ice cream recipe of the season!

Here's what you need to make the perfect base recipe for this Halloween protein ice cream:
- Chocolate Protein Powder for high protein Ninja Creami creami ice cream! Use a good quality protein powder since this will determine the taste of your ice cream.
I used half whey-casein from Quest Nutrition, half whey isolate from Peachie Spoon.- Chocolate Protein Substitute: Use vanilla protein powder; This is the one from Quest and Peachie that I recommend.
- Whey-Casein Substitute: Use all Whey Protein Powder, but you may require an extra re-spin for a smooth texture
- Black Cocoa Powder: This is what gives the "Midnight Black" color, perfect for a spooky Halloween ice cream recipe. This is the one I used. Another recommendation is this one from The Cocoa Trader.
- Substitute: Use Regular Unsweetened Cocoa Powder. The final color will be dark brown, not the true black.
- Sugar-free Chocolate Instant Pudding Mix: The binder! love the one from Simply Delish; Its actually plant based!
- Substitute: Use a small amount of xanthan gum (¼ tsp) as a binder to achieve a similar result; I haven't tried it yet though so if you do, let me know!
- Unsweetened Almond Milk: Provides the bulk of the liquid volume while keeping the calories low.
- Substitute: You can use any skim low fat milk of your choice here - low fat milk, skim milk, oat milk, or soy milk. Fat free fairlife milk would be perfect too!
- 1% Lowfat Milk: Adds a touch of creaminess and richness for a better texture after freezing.
- Substitute: A slightly thicker milk than almond milk is needed; Any 2% milk or even whole milk would work.
- Low fat Cottage Cheese: The secret ingredient for making this halloween ice cream base creamy.

Making this ninja creami caramel ice cream recipe is really easy with very little hands-on time:
1. Combine the Base: In your Ninja Creami pint container, combine the almond milk, lowfat milk, cottage cheese, protein powder, black cocoa, and pudding mix.
2. Blend Until Smooth: Use an immersion blender to mix the ingredients thoroughly until the base is perfectly smooth and creamy
Tip 1: Bend the base well or the ice cream will not be smooth.
Tip 2: Scrape down the sides to ensure no powder is left
Tip 3: Make sure the mixture stays below the max fill line.
Tip 4: Taste the mixture; Add extra sweetener or vanilla extract if you need!
3. Freeze: Cover with the lid and freeze upright for a minimum of 24 hours.


4. Prep for Spinning: After freezing, let the container sit on the counter for 10-15 minutes, or rotate it under running hot water for 20-30 seconds.
Tip: Don't skip this step or you might damage the blades of your creami.
5. Initial Spin: Insert the container into the Ninja Creami machine and run the Ice Cream setting.
6. Add Mix-Ins: Remove the pint and use a spoon to create a deep well in the center of the ice cream. Place the candy corn in the well.
7. Final Mix: Insert the container back into the machine and run the Mix-in cycle to fully incorporate the candy corn.
8. Re-Spin (If Needed): If the ice cream is still powdery or crumbly, add in a ½ tablespoon of milk and run the Re-spin function for a perfect creamy texture.

10/10 recommend using good immersion blender here. I love this cordless one from KitchenAid, but you can use a regular one too.

Instructions
- Note: Use 1.5x the recipe if you have a Ninja Creami Deluxe.
- In your Ninja Creami pint container, combine all the ingredients: unsweetened almond milk, 1% lowfat milk, low fat cottage cheese, chocolate protein powder, black cocoa and pudding mix.
