Protein Pumpkin Bread (Fat Free, Sugar Free, Healthy)

High protein pumpkin bread that has zero oil, zero butter, and still comes out so soft and so moist and so everything you want in a fall loaf. It's been one of the most-made fall recipes on this blog - someone made it 7 times in one season, and honestly? Understandable.

It comes together fast, bakes up beautifully, and gets all its sweetness from vanilla protein powder and a little sugar free maple syrup. No complicated steps, no specialty equipment. Just pumpkin spice and everything nice.

This recipe actually started as a half-loaf bake because I had a mountain of fall recipes to get through and needed to move fast. Made a little foil mold, shot it at an angle so you couldn't tell, and honestly? The bread was so good I didn't even feel bad about it. It became one of the most searched recipes on the blog.

I remade it in 2022 right before my IG account got suspended - which, that was a whole thing - and filmed myself eating it with high protein almond butter from American Dream Nut Butter (code HAYLSKITCHEN gets you a discount, highly recommend). I also had some with ice cream and filmed that combo too. Those clips never made it onto the internet though. A tragedy, honestly. The loaf deserved better. But here we are in 2026 with a proper glow up and no complaints 🙂

Why You'll Love This Recipe

  • 9g of protein a slice, for 100 calories. No protein powder aftertaste, no dry crumb - the pumpkin puree and Greek yogurt carry enough moisture to hide the powder completely.
  • No oil, no butter, no added sugar. The fat comes in at 1.3g a slice. Sweetness is entirely from vanilla protein powder and sugar free maple syrup, so this stays a genuinely sugar free protein pumpkin loaf rather than a lightly-sweetened one.
  • It beats the coffee shop version on both counts. A Starbucks Pumpkin & Pepita Loaf is 360 calories and 6g of protein. This is a third of the calories with more protein.
  • It's a real breakfast, not a snack you have to ration. 2.5g of fiber and 9g of protein a slice means it holds you, which is why readers keep coming back to it - one has made seven loaves in a single fall

Ingredients for High Protein Pumpkin Bread

Here's the simple pantry staples you need for this fall breakfast quickbread.

For the wet ingredients:

  • Pure Pumpkin Puree - the moisture and most of the flavor. Canned like Libby's or homemade, but make sure it isn't pumpkin pie filling, which is already sweetened and spiced.
    • TIP: If your puree looks watery in the can, blot it with a paper towel first. Extra liquid is the main reason a protein pumpkin loaf comes out gummy, or can sink in the middle. Something similar happened when I was working on my protein zucchini bread.
  • Sugar Free Maple Syrup - the only sweetener besides the protein powder, and what keeps this a low calorie pumpkin bread with no added sugar. I use the monk fruit maple syrup from Lakanto.
    • Sub: Regular maple syrup or honey, though then it isn't sugar free.
  • Non-Fat Greek Yogurt - the tenderness that oil would normally give you, plus more protein. Room temperature so it blends in smoothly.
    • Sub: Coconut yogurt for dairy free. Update: a reader has had success with this substitution.
  • Almond Milk - brings the batter to a pourable consistency.
    • Sub: Any other milk. A reader has had success using oat milk here.
  • Eggs - the structure. Room temperature large eggs so they don't seize the cold yogurt.

For the dry ingredients:

  • Flour - either whole wheat pastry flour, all purpose flour or a 1:1 gluten free baking flour. Whole wheat pastry gives you the lightness of a refined flour with the nutrition of whole grains; the gluten free version bakes just as well.
    • TIP: Measure by weight, not cups. The two flours don't scale the same by volume.
    • Sub: One reader used chickpea flour and reported it rose well but came out noticeably more savory, so she added extra sweetener. Worth knowing before you try it.
  • Vanilla Protein Powder - the protein and the sweetness, since there's no added sugar in this recipe. I use whey-casein from Quest Nutrition because it holds moisture through a 50-minute bake instead of drying out the way isolate does.
    • TIP: Plant based powders work but bring an earthy note. If you use one, taste the batter and add a splash of vanilla extract plus a little stevia to balance it.
  • Unflavored Protein Powder - replaces some of the flour and carbs for a slightly lower carb protein powder pumpkin bread. I use plant unflavored from KOS.
    • Sub: Leave it out, use more flour, and cut the milk back to about 3 tablespoons. Update: a reader has had success with this substitution. Another reader swaps in vanilla casein for half of it and drops the milk to 2 tablespoons.
  • Pumpkin Pie Spice - what makes this read as a pumpkin spice protein bread rather than a plain quickbread. Feel free to blend your own from ground cinnamon, nutmeg, ginger and cloves; the ratio is in the recipe notes.
  • Baking Powder - the lift. Protein powder is heavy, so don't skimp.

How to make Protein Powder Pumpkin Bread

Not only is this high protein pumpkin bread recipe healthy, it's also genuinely easy - two bowls and a fold.

Step 1. Preheat and Line:  Preheat your oven to 350°F and and grease an 8½" x 4½" loaf pan with non-stick cooking spray and line with parchment paper.

Step 2. Whisk the Wet Ingredients: In a large bowl, whisk together the pumpkin puree, Greek yogurt, almond milk, maple syrup, and eggs until smooth.

Step 3. Whisk the Dry Ingredients:  In a separate bowl, whisk together the flour, vanilla protein powder, unflavored protein powder, pumpkin pie spice, and baking powder.

Step 4. Fold, Don't Stir: Add the wet ingredients to the dry and fold gently until just combined. Do not overmix. Overmixing activates the gluten in the wheat flour and makes the protein powder tough - you will end up with a dense brick instead of a soft loaf.

Step 5. Pan: Pour the batter into your prepared loaf pan. Optionally, sprinkle pumpkin seeds on top of the bread.

Step 6. Bake: Bake for 50 to 55 minutes. A toothpick inserted into the center of the loaf should come out dry.

Step 7. Cool Properly:  Let the bread cool in the pan for 15 minutes, then lift it out using the parchment lining. Transfer to a wire rack and cool completely, about 30 more minutes, before slicing.

Another option here is use a 12-cup muffin pan and make pumpkin protein muffins!

Tips for the Best Pumpkin Protein Loaf

Room temperature ingredients matter. Cold eggs or yogurt can cause the batter to seize up and bake unevenly. Set them out 30 minutes before you start.

Do not overmix. This is the one rule. Fold until you just do not see dry flour anymore and then stop. A few small lumps are totally fine. My protein coffee cake with streusel uses the same gentle fold method - that one turned out so good and it is proof that not overmixing really does make all the difference.

The toothpick test is your best friend. Ovens vary, so start checking at 50 minutes. The top should look set and a toothpick inserted in the center should come out clean or with just a few dry crumbs.

Let it cool fully before slicing. Cutting into a hot protein loaf will make it gummy and fall apart. Give it the full cooling time and you will get clean, even slices.

Pumpkin seeds on top are optional but really good. They add a little crunch and make the loaf look like it came straight from a bakery.

How to Store:

This moist and tender protein packed pumpkin loaf keeps really well and is great for a meal prep snack, breakfast, dessert or postworkout treat. Bake it at the beginning of fall and enjoy a slice of pumpkin bread for Thanksgiving!

Counter: Store in an airtight container at room temperature for up to 2 days.

Fridge: This loaf keeps well in the fridge for up to 5 days. The texture stays great and it is honestly just as good cold.

Freezer: Slice first, then freeze in an airtight bag or container for up to 3 months. Pull out a slice whenever you need it. Thirty seconds in the microwave and it tastes freshly baked.
You can even store the whole loaf itself - be sure to let it thaw before you serve.

Readers reheat a slice for about 20 seconds in the microwave, often with peanut butter, almond butter or a hazelnut spread on top.

Frequently Asked Questions

Can I make this into muffins?

Yes! Fill a lined muffin tin about ¾ full and bake at 350°F for 18 to 22 minutes. Check with a toothpick. Makes about 10 to 12 muffins.

My bread came out dense. What happened?

Overmixing is almost always the culprit. Also check that your baking powder is fresh - old baking powder will not give you the rise you need. And make sure your yogurt and eggs were at room temperature before you started.

Can I use regular maple syrup instead of sugar free?

Absolutely. The recipe works the same way. It just adds a small amount of sugar.

Can I freeze this?

Yes! Slice the cooled loaf, wrap slices individually, and freeze for up to 3 months. Thaw at room temperature or microwave for about 30 seconds.

Ingredients

  • 1¼ cup Pumpkin Puree, not pumpkin pie filling 300g
  • ½ cup Non-fat Greek Yogurt, about 112g, Room temperature
  • ⅓ cup Unsweetened Almond Milk, 80ml
  • 2 tablespoon Maple Syrup, Sugar free recommended below
  • 2 Eggs, Room Temperature
  • 1¼ cup Flour, 150g, see blog post above for options
  • ½ cup Vanilla Protein Powder, 45g, Whey-caesin
  • ⅓ cup Unflavored Protein Powder, 30g, Whey-casein, see blog post above for options
  • 1 tablespoon Pumpkin Pie Spice, see notes for homemade
  • 1 tablespoon Baking Powder

Instructions

  • Preheat oven to 350°F and line an 8½" x 4½" loaf pan with parchment paper.

  • Add wet mix to dry, and gently fold until combined. DO NOT OVER-MIX or protein powder and gluten will from wheat flour will make the bread dense.
  • Pour batter into prepared loaf pan. Optionally, sprinkle pumpkin seeds on top.
  • Bake for 50-55 minutes. A toothpick inserted into center should come out dry.
  • Cool for 15 minutes, then lift out of pan using the lining. Transfer to a wire rack to cool completely, about 30 minutes and cut into slices.

      I haven't used plant based protein in this recipe myself, but I do know that plant based protein powders tend to have a bit of an earthy flavor to them. So if you do use it, I would say taste the batter and add a bit of vanilla extract + stevia as needed.

    I make this on repeat! Instead of unflavored protein powder I use half flour and half vanilla casein and only 2 tablespoons of milk. I eat it every morning with peanut butter and hazelnut spread and banana and a sprinkle of cinnamon. I am currently on my 7th loaf this fall ??

      I love the idea of the hazelnut spread and banana. I've tried it with ice cream and PB and that's a good combo too (maybe an excuse to have ice cream for breakfast? haha).

    made it, and it came out perfect! I was a little worried, because I didn't have gluten free flour, only other subs, so I did a little research and found out that chickpea flour is the best sub for whole wheat. It did rise really well, only that it's more savoury, so if anyone wants to try it like me, I'd add more sweetener 🙂

    This recipe was awesome! So easy to make and the best part - it worked even with substitutes! I sub coconut yogurt from Greek yogurt, flour for unflavored protein, and oat milk for almond milk and it came out great!! Will definitely make again!
