Honestly, in their classic forms, they're both high in sugar and fat, making them more cake than bread! But for us, focusing on a macro-friendly diet, the winner is the loaf that's modified. Since my protein pumpkin banana bread is completely sugar free, swaps fat for pumpkin and non-fat Greek yogurt, and packs in that high protein boost, it beats any traditional loaf out there - hands down!

It's so moist (yes, we say it!) and flavorful, you'd never guess it's completely sugar free and packed with protein. The only reason my husband knew was because he knows I only bake high protein and no sugar treats, haha.

Trust me, this is the macro friendly pumpkin banana loaf you've been dreaming of! With no butter or sugar, and only 120 calories a slice this loaf is great even for a toddler!

Ingredients for Healthy Pumpkin Banana Bread Recipe

  • Mashed Banana: Provides natural sweetness and moisture; make sure you use overripe bananas for the best flavor.
  • Pumpkin Puree: Adds moisture, autumn flavors, as well as essential fiber and vitamin Be sure to use raw canned pumpkin puree not pumpkin pie filling.
  • Non-fat Greek Yogurt: This adds extra protein and keeps the loaf incredibly moist without adding fat.
  • Egg: A binder and adds to the rise
  • Vanilla Extract: It adds good depth to the flavor.
  • Flour: Whole wheat pastry flour, 1:1 gluten free baking flour or all purpose work here
  • Vanilla Whey-Casein Protein Powder: This is key for adding protein and sweetness since there's no added sugar in this protein powder banana bread. I personally love and used the one from Quest.
  • Unflavored Plant-Based Protein Powder: I use this to add extra protein without the sweetness, and it actually replaces some flour, which is a great trick! I recommend the one from KOS.
  • Coconut Flour: A highly absorbent flour that helps achieve the ideal dense-but-tender texture in a high protein loaf.
  • Baking Powder: Our lift!
  • Pumpkin Pie Spice: For those fall flavors we all crave.
    You can also make your own mix with cinnamon, nutmeg, allspice, ginger and cloves.
  • Cinnamon Powder: An extra layer of warmth that perfectly complements the banana and pumpkin.
  • Chopped Pecans (Optional): Adds a nice crunch and healthy fats to the topping. Feel free to use walnuts, raisins, or even sugar-free chocolate chips here!

Alternatives for Healthy Pumpkin Banana Loaf

For the perfect healthy pumpkin bread with bananas, I would highly suggest using the ingredients and brands I recommended. Here are some alternatives you can try if you need to swap things out. Just note that I haven't tested every one, so your loaf might turn out a little different!

  • Flour: I used 1:1 gluten free baking flour here, but you can use whole wheat pastry flour or all purpose flour too; Use the same amount by weight
  • Whey-casein Protein Powder: I highly recommend using the whey-casein and plant-based combo for the best texture, but you can try using a full whey-casein blend if that's all you have. Be warned, you may need to adjust the liquid, as whey can sometimes dry out baked goods.
  • Unflavored Protein Powder: In case you don't have any, use extra flour.
    I also recommend reducing the yogurt to 2-3 tablespoon in this case.
  • Coconut Flour: Use about ¼ cup regular flour
  • Nonfat Greek Yogurt: Use regular Greek Yogurt or even Coconut Yogurt

Want a vegan option? You totally can!

  • Replace the eggs with flax eggs.
  • Use coconut yogurt instead of Greek yogurt to make it dairy-free.
  • Swap the whey-casein powder with another plant-based protein powder (just be sure to add extra sweetener and vanilla extract to the batter since plant-based options are often less sweet).

How to make Pumpkin Banana Bread with Protein Powder

Follow these simple steps to bake your perfect pumpkin banana bread with protein powder!

  • Prep: Preheat your oven to 350∘F and line a 8 x 4 inch loaf pan with parchment paper.
    Quick tip: Grease and line the baking pan before pouring the batter in-it makes lifting the loaf out so easy!
  • Wet Ingredients: In a large bowl, whisk together the mashed banana, pumpkin puree, non-fat Greek yogurt, eggs, and vanilla extract.
    Tips:
    1. Don't Skimp on Ripeness: Seriously, those spotty brown bananas are essential for a truly sugar free banana pumpkin bread!
    2. I highly recommend a hand mixer for the smoothest batter-it just incorporates better.
  • Dry Ingredients: In a separate medium bowl, whisk together the flour, both protein powders, coconut flour, baking powder, pumpkin spice, and cinnamon.

  • Combine: Add the wet mixture to the dry ingredients and gently whisk until they are just combined.
    Tips:
    1. Crucially, do not over-mix! Over-mixing protein powder will activate the gluten and result in a dense, chewy loaf rather than a light, tender one. This is the #1 secret to a moist, not rubbery, pumpkin banana protein loaf.
    2. Taste Test! Give the batter a quick taste and see if you need any extra sweetener. Not all protein powders are equally sweet! To keep this a proper sugar free pumpkin banana bread, I recommend using a little stevia powder or monk fruit. Or maple syrup if the sugar-free part is not as important.

  • Bake: Pour batter into your prepared loaf pan. If using, sprinkle the pecans over the top.
    Bake for 55-60 minutes. A toothpick inserted into the center should come out dry when done.
    Tips:
    1. The Foil Tent Rule: After the first 30 minutes, cover the loaf loosely with a foil tent to prevent the top from burning.
    2. Check for Done: A toothpick inserted into the center should come out completely dry when it's done.
  • Cool: Let the loaf cool in the pan for 15 minutes. Then, use the parchment paper to lift the pumpkin banana bread out and transfer it to a wire rack to cool completely-about 30 minutes-before slicing and enjoying.

I recommend using a good nonstick loaf pan for this recipe!

And a good hand mixer for the batter. I love this cordless one from KitchenAid, but you can use the regular one too.

Storage Instructions for your Sugar Free Banana Pumpkin Bread

Store your freshly baked pumpkin banana loaf to maintain its moist texture and flavor. It makes a great meal prep macro-friendly breakfast or even post workout snack.

  • Countertop: Store the cooled loaf in an airtight container at room temperature for up to 3 days.
  • Refrigerator: Keep it in an airtight container in the refrigerator for up to 5 days.
  • Freezing: For long-term storage, slice the cooled loaf, wrap individual slices tightly in plastic wrap, and or place them in a freezer-safe bag or container. It will keep well for up to 3 months. Thaw slices in the fridge or microwave when it's time to enjoy.

  • 150 g Mashed Banana, from completely ripe bananas (½ cup + 2 Tbsp)
  • 150 g Pumpkin Puree (½ cup + 2 Tbsp)
  • ¼ cup + 2 tablespoon Non-fat Greek Yogurt, 85g
  • 2 Egg
  • 1½ teaspoon Vanilla Extract
  • ⅔ cup Flour, 80g
  • ½ cup Vanilla Protein Powder, Whey-casein, 45g

Instructions

  • Preheat oven to 350°F and line a loaf pan with parchment paper.
  • In a large bowl, whisk (hand mixer recommended) together mashed banana, pumpkin puree, yogurt, eggs and vanilla extract.
  • In another bowl, combine flour, unflavored protein powder, vanilla protein powder, baking powder, pumpkin pie spice and cinnamon.
  • Add wet mix to dry, and gently whisk until combined.
    DO NOT OVER-MIX or protein powder will make the bread dense.
  • Pour into prepared loaf pan.
    Top with pecans if you prefer.
  • Bake for 60 minutes, covering with a foil tent after 30 minutes.
    A toothpick inserted into center should come out dry.
  • Cool for 15 minutes, then lift out of pan using the lining. Transfer to a wire rack to cool completely, about 30 minutes and cut into slices.
