A beautiful Protein Cinnamon Toast Crunch Cake loaded with the cereal, but no sugar and no eggs either! This healthy cinnamon toast cake uses protein powder for sweetness and is low calorie, low fat and just an overall clean dessert!

Cinnamon toast crunch cereal is one of my top cereals and this protein cake was just beautiful! Proper cinnamon flavor, the crunch in the topping, and little cereal bits inside too.

Very little butter, no oil and no sugar in this recipe though for a no guilt treat!

Protein Cinnamon Toast Crunch Cake Ingredients:

This recipe for high protein cinnamon toast crunch cake is made with whole wheat pastry flour, no sugar and just clean ingredients!

  • Vanilla Protein Powder: For a cinnamon toast crunch cake with no sugar; I used Quest Vanilla
  • Whole Wheat Pastry Flour
  • Coconut Flour
  • Unsweetened Applesauce
  • Hot Water
  • Some Lemon Juice
  • A bit of Melted Butter
  • Baking Soda
  • Cinnamon
  • Cinnamon Toast Crunch Cereal

For the Protein Frosting for this Cinnamon Toast Cake:

  • Vanilla Protein Powder: I recommend HTLT Supps or Quest Nutrition Vanilla here since it’s whey-casein and blends well with the yogurt.
  • Non-fat Greek Yogurt 
  • More Cinnamon Toast Crunch Cereal for topping

Tips for this Cinnamon Toast Crunch Cake with Protein Powder

This healthy cinnamon toast crunch cake with protein powder really is easy to make, but here’s some things to follow to get it right.

  • Use melted Butter so that it mixes well into the healthy cake batter.
  • Don’t over-mix the batter!
    Pour the dry mix into the wet along with the milk and just gently fold them together. Don’t over-mix it or too much gluten will develop, which is what will make the cake gummy and dense.
    There will be some lumps, but that’s completely okay!
  • Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter and have sugar free and healthy cinnamon cake.
  • Don’t let the batter sit out too long; Pour immediately into baking pan and bake.
    This is to avoid any reactions between the ingredients.
  • Don’t over-bake the cake or it will get tough; Remove when the tester/knife comes out just dry, but moist.
  • Let cake cool completely before frosting or the frosting will melt.

For the Frosting in this Macro Friendly Cinnamon Cake:

  • Use whey-casein protein powder since it mixes well with the yogurt.
  • Only add milk if necessary; Mix the frosting well first, and then add milk if still too dry.

Can you store this Protein Cinnamon Cake?

This moist and fluffy protein cinnamon cake keeps really well and is great for a meal prep snack – freezer friendly too!

You can keep the protein powder cinnamon cake out at room temperature for a few hours and for 4 or 5 days in the fridge. Be sure to use an airtight container.

To freeze the healthy cinnamon toast crunch cake, slice the cake, wrap in plastic wrap, and place the pieces in a freezer-safe zipper bag. Thaw when you crave a midday treat! You can even store the whole protein cinnamon toast cake itself!

Alternatives for Healthy Cinnamon Toast Crunch Cake Recipe with No Sugar

For the perfect healthy cinnamon toast crunch cake recipe with no sugar, I used protein powder and monk fruit sweetener to replace the sugar and I would highly suggest using the ingredients recommended.

I do have some alternatives you can try. I haven’t testing them all, so I can’t say how the recipe might turn out.

  • Whole Wheat Pastry Flour: Use All purpose flour or 1:1 Gluten Free Baking Flour in the same amount by weight not cups.
  • Coconut Flour: ½ cup more Flour or Oat Flour
  • Melted Butter: Melted Coconut Oil or Dairy Free Butter
  • Lemon Juice: Apple Cider Vinegar or White Vinegar
  • Greek Yogurt: Coconut Yogurt

Ingredients

  • ¾ cup + 2 Tbsp Whole Wheat Pastry Flour, see post for subs, 105g
  • ⅔ cup Vanilla Protein Powder (Whey-casein), 60g
  • ¼ cup Coconut Flour, 28g
  • 2 teaspoon Cinnamon
  • 1½ teaspoon Baking Soda
  • 1 cup + 2 Tbsp Hot Water, 270ml
  • ¾ cup Unsweetened Applesauce, 180g
  • 1 tablespoon Lemon Juice
  • 2 teaspoon Melted Butter, 10g
  • ¾ cup Cinnamon Toast Crunch Cereal, 30g

Protein Frosting:

  • ¾ cup Non-fat Greek Yogurt, 168g
  • ⅓ cup Vanilla Protein Powder, Whey-Casein, 30g
  • ¼ cup Cinnamon Toast Crunch Cereal, 10g

Instructions

  • Preheat oven to 350°F and line a 8” cake pan or baking dish with parchment paper.
  • In a bowl, whisk flour, protein powder, coconut flour, cinnamon and baking soda.
  • In a large bowl, whisk together hot water, applesauce, butter and lemon juice.
  • Add dry mix to wet, and gently fold until just combined.
    DO NOT OVER-MIX or protein powder will make the cake dense.
  • Add in cinnamon toast crunch cereal and mix.
  • Pour batter into pan, and bake for 22-25 minutes.
    Don’t let the batter sit out.
    A tester inserted into the center should come out clean and center of cake springy to touch.
  • Let cool in pan for 10 minutes then transfer to a cooling rack to cool completely.

Frosting:

  • Let cool completely first.
  • In a small bowl combine yogurt and protein powder and optional stevia sweetener. Stir until uniform.
  • Spread frosting over cake.
  • Top with crushed cinnamon toast crunch cereal.

    This cake is AMAZING! My family ate it in one sitting! Depending on what type of protein yiubused1 it will be more crumb like or more like a apple cinnamon bread pudding. I sprinkled the top with Monkfruit and brown sugar swerve and it makes the top “ sugary” and crunchy. This can be for dessert or for breakfast with hard boiled eggs!! Yum!

    Can’t afford to buy all those specialized ingredients and then discover maybe I don’t like it don’t even know where to get most of them

      Hi Darlene; I appreciate your comment and understand your concern.

      The only ‘specialized’ ingredients in this recipe are Whey-Casein protein powder and coconut flour.

      Coconut flour is also a very common ingredient now, and can be found at most grocery stores, or Amazon too.

      With not liking the result, I believe it’s a matter of personal taste at that point. We all go to restaurants or cafes and end up ‘not liking’ a dish at times. Others may like it, but we may not.
      That said, I can vouch that this recipe really is good; 3 people have tried it (other than myself) and they all said good words.

    This cake is insane … easily the best protein baked dessert I’ve had. I subbed the water for 1% milk and added 20g erythritol to the batter to sweeten it up a bit and it came out great. Do you have anything else that you think tops this in your humble opinion?
