But actually a healthy blondie recipe here since there’s no butter and sugar like the regular ones.

Ingredients for Collagen Protein Blondies

These extra fudgy collagen protein blondies are made without protein powder and only a few healthy ingredients; No eggs, no oil, no sugar and gluten free too.

  • Unflavored Collagen Peptides needed for high protein brownies. I use the one from Further Foods (HAYLSKITCHEN gives you a discount)
  • Zero Calorie Brown Sugar – This is the Brown Monkfruuit 1:1 Sugar Substitute from Lakanto, and keeps this recipe sugar free;  (code HAYLSKITCHEN for a discount here)
  • Peanut Butter Powder, also known as Powdered Peanut Butter. I use Lakanto for a sugar free version (the code HAYLSKITCHEN gives you a discount here too)
  • Coconut Flour
  • Whole Wheat Pastry Flour – or a regular all purpose flour
  • Runny Tahini
  • Non-fat Greek Yogurt contributes to the oil-free part of these high protein brownies since it adds the moisture, and also extra protein 
  • Egg Whites for extra high protein without the added fat from the yolk
  • Almond Milk or regular milk
  • Vanilla Extract
  • Baking Soda
  • Sugar free White Chocolate Chips or Chopped Chocolate – I use sugar free ones from Lily’s here.

Tips to make Collagen Powder Blondies with no Protein Powder?

This recipe for chocolate chip collagen blondies is extremely easy to make. Here’s some pointers to get it right though.

  • Mix all the dry ingredients and wet ingredients separately, then combine. You want the mixture to be smooth.
  • For extra fudgy collagen blondies, let some moisture be there on the tester – this should be at about 25 minutes.
  • Use a plastic knife to cut the blondies; these collagen protein blondies are quite fudgy and will stick to a metal knife when cutting.

How to store Collagen Peptides Blondie Bars?

This high protein collagen peptides blondies recipe keeps well for a meal prep dessert or post workout snack and is freezer friendly too!

Store the collagen powder dessert at room temperature in an airtight container for 1-2 days or in the fridge for a week.

To freeze collagen blondies, individually wrap in plastic wrap and place in freezer-safe zipper bags or air tight container; They should keep for 2-3 months.

Alternatives for Healthy Protein Blondies without Protein Powder 

For the perfect fudgy and moist protein collagen powder blondies bars, I would highly suggest using the ingredients and brands I recommended; I do have some alternatives you can try. I haven’t testing them all, so I can’t say how your recipe might turn out.

  • Whole Wheat Pastry Flour: All purpose flour or 1:1 Gluten Free Baking Flour, in the same amount by weight.
  • Zero Calorie Brown Sugar Alternative: Regular coconut sugar or brown sugar (this won’t be sugar free though, and also higher in calories)
  • Peanut Butter Powder: Regular peanut butter, but reduce milk to 2 Tbsp.
  • Tahini: Peanut Butter, Almond Butter, Cashew Butter, or any nut or seed butter.
  • Greek Yogurt: Coconut Yogurt
  • Almond Milk: Any other milk

    This was the best to date. I added seasonal blackberries at the end with coco whip (yes, I am sugar-free) but have sweet tooth!). Love the combo!

    These were tasty and easy to make. I love the texture. I should have tasted the batter before baking because they were much less sweet than I’m accustomed to, but I’ve solved that with a little ice cream. Highly recommend!

      I’m so happy they worked out for you Katy! I actually had that opposite issue when I first tried the recipe, and ended up finding it too sweet. Maybe we need to both revisit? Haha.

      Hi Julie! You’re gonna love this one!
      Unfortunately protein powder won’t work here in place of collagen. They both bake very different.

      I was planning on a Blondie with protein powder, so if you’d be interested in that I could work on it sooner!
