- Bread: I use low-calorie wheat bread, but swap it out for brioche, challah, or your favorite bread (adjust macros accordingly). Gluten-free bread works too!
- Whey Protein Powder: Feel free to use whey-casein or any other type of vanilla protein.
Plant-based would be fine too, just be sure to add a bit of sweetener and even some vanilla extract. I recommend KOS, Truvani or Birdman Vanilla here.
Be sure to adjust the amount of milk based on the protein powder (whey-casein and plant-based tend to absorb more) - Chocolate Protein Powder: You can use vanilla if you prefer!
- Milk: Any unsweetened milk - Soy, oat, cashew, or even dairy milk - works perfectly for the French toast batter.
- Greek Yogurt: If you don't have nonfat plain Greek yogurt, you can use regular Greek yogurt or thick coconut yogurt for a dairy-free option.

- Prepare the French Toast Batter: In a large, shallow bowl or container, whisk together the almond milk, egg white (or egg), and vanilla protein powder until well combined and smooth.
- Soak the Bread: Place the bread (one slice at a time if needed) into the mixture and let it soak for about 1 minute. Flip and let the other side soak for another minute.
- Cook the French Toast: Heat a large non-stick pan/skillet over medium-low heat and lightly spray with cooking spray. Carefully place the soaked bread onto the pan.
Cook for 2-3 minutes until golden brown, flip and cook the other side for another 2 minutes. Do the same for both slides, working one slice at a time if you need. - Make the Chocolate Spread: While the French toast cooks, in a bowl, combine the Greek yogurt, chocolate protein powder, and cocoa powder. Mix well until you have a smooth chocolate "frosting." Taste and add a pinch of sweetener if you like.
