Protein Pumpkin Oat Bars (Soft, Baked, and 14 protein!)

Protein pumpkin oat bars are what happen when you have a can of pumpkin, a bag of instant oats, and four days before a flight to London where you suddenly realize you've packed nothing for your sister.

These are soft, not dry, and hit 14g of protein per bar from Greek yogurt, peanut butter powder, and two protein powders. No added sugar. Mix of milk and white chocolate chips throughout. And they survived an international flight just fine.

I spotted the SEO gap, committed to the recipe, and then immediately found out I only had instant oats. No rolled oats in the house. I used the instant oats anyway - and they actually worked better for this specific recipe. Instant oats absorb liquid faster, which is why the center bakes up soft and almost pillowy instead of dense and chewy. I packed two-thirds of this batch in my carry-on for a flight to London - my sister's new home, first visit - and she loved them. She called out the white chocolate chip mix specifically, which she said she wouldn't normally go for but completely changed her mind on with pumpkin and cinnamon. That's the review.

Ingredients for these Pumpkin Protein Oat Bars?

This one leans on pumpkin puree and yogurt for moisture instead of oil, so the protein powder has room to do its job without drying the bars out.

  • Instant Oats aka quick-oats absorb liquid faster than regular oats, so the bars bake up softer and more baked-oatmeal-like.
    • Sub: rolled oats work too, just pulse them a few times in a food processor first or the bars won't hold together as well.
  • Whey-Casein Vanilla Protein Powder is the sweetener and a big chunk of the protein. I use a whey-casein blend specifically because it holds onto moisture better than straight whey isolate, which is what keeps these from turning into protein hockey pucks. I use Quest Nutrition's Vanilla Whey-Casein. My protein pumpkin blondies use the same blend for the exact same reason - moisture retention is everything in a baked oatmeal protein bar.
    • Sub: Whey isolate is a great option, but don't add any milk. Add tablespoon at a time if needed. A plant-based vanilla protein like KOS works, but add a tiny bit of stevia and extra vanilla extract to cut the earthy flavor.
  • Unflavored Plant-Based Protein Powder rounds out the protein count without stacking more vanilla flavor on top of vanilla flavor. I use KOS Plant Unflavored Protein Powder.
    • Sub: an unflavored whey works too if you're not dairy-free, though the texture shifts slightly.
      Alternatively, use 30g oat flour or more oats.
  • Peanut Butter Powder adds a nutty backdrop and a bit more protein without the fat load of regular peanut butter. I use PbFit Powdered Peanut Butter.
    • Sub: almond butter powder if peanut isn't your thing. Or use oat flour or a mix of more oats + unflavored protein.
  • Baking Powder keeps these from baking up dense. Don't skip it, dense pumpkin bars are a sad way to spend your protein macros.
  • Cinnamon is doing the pumpkin spice heavy lifting here.
    • Sub: use pumpkin pie spice or even add a pinch of nutmeg or ginger if you want the full protein pumpkin spice baked oats effect instead of just cinnamon.
  • Pumpkin Puree brings moisture, fiber, and the flavor that's the whole point of this recipe.
    • TIP: make sure it's plain pumpkin puree, not pumpkin pie filling, that stuff is already sweetened and spiced and will throw off the whole recipe.
  • Non-fat Greek Yogurt adds protein and moisture without adding fat.
    • Sub: full-fat Greek yogurt works if that's what you have, the bars will just be slightly richer.
  • Almond Milk thins the batter to the right consistency. Sub: any milk you have on hand, dairy or not, works fine here.
  • Egg binds everything together.
  • Sugar-Free Chocolate Chips, a mix of milk and white, because a pumpkin bar without chocolate chips is really just a pumpkin muffin top having an identity crisis. Lol. I use Lily's Milk Chocolate Chips and Lily's White Chocolate Baking Chips.
    • Sub: chopped chocolate, dried cranberries, raisins, pecans or walnuts
    • Tip: Save a small handful to press into the top before baking. You get chips in every bite and they look great.

Ingredient Swaps and Adaptations

Gluten Free: Use certified gluten-free instant oats. Everything else is already GF, but check your protein powder label too.

Dairy Free: Swap the Greek yogurt for a thick plant-based yogurt - coconut or almond, not drinkable. Use a plant-based vanilla protein powder like KOS in place of the whey-casein.

Vegan Same as dairy free with the vegan protein powder, but use flax eggs or a vegan egg sub.

Nut-free: Replace peanut butter powder for 3 tablespoons more oats + 3 tablespoons unflavored protein powder. You'll lose a little flavor and a few grams of protein but the bars will still hold together.

How to Make Protein Pumpkin Oatmeal Bars

1. Preheat and prep. Set your oven to 350°F and lightly grease an 8x8" baking pan. Line with parchment paper if you want clean lift-out bars.

2. Whisk the dry ingredients. In a large bowl, whisk together the oats, vanilla protein powder, unflavored protein powder, peanut butter powder, baking powder, and cinnamon. Use an actual whisk - protein powder clumps, and a spoon won't break those up properly.

3. Add the wet ingredients. Add the pumpkin puree, Greek yogurt, almond milk and egg into the same bowl.

4. Mix until just combined. Don't overwork it - once the dry streaks are gone, stop.

5. Fold in the chocolate chips. Add the chips and fold with a spatula. If you're saving some for the top, set those aside first.
Taste for sweetness and add a pinch of stevia if needed.

6. Pour and flatten. Spread the batter into your prepared dish and smooth the top with the back of a spoon or spatula. The mixture is thick - that's correct. Press any reserved chips into the top.

7. Bake. Bake for 18-22 minutes. The center should look just set and slightly glossy on top. A knife inserted in the middle should come out slightly moist, not clean. If it comes out clean, they've gone too far.
TIP: Pull these early, not late. The bars keep cooking in the pan as they cool. An extra 5 minutes in the oven is the fastest way to dry out a protein pumpkin oat bar.

8. Cool before slicing. Let them cool in the pan for 15-20 minutes before cutting. They firm up a lot as they cool and will fall apart if you cut too soon.

9. Serve. Slice into bars and serve with vanilla yogurt on top, soaked in milk or with some maple syrup or honey.

Tips for the Best High Protein Pumpkin Baked Oats

Instant oats over rolled for this recipe. The texture is softer and more baked-oatmeal-like. Rolled oats will give you more chew, which is a different result - not bad, just not what this recipe is going for.

Weigh the oats and protein powders. Measuring cups are inconsistent, especially with oats. A scale takes the guesswork out and makes the texture repeatable.

Room temperature yogurt. Cold yogurt doesn't mix into the batter as evenly and can leave streaks in the finished bars.

Mix the chocolate chips. White and milk chocolate together in a pumpkin cinnamon bake is a combination worth trying even if white chocolate isn't usually your thing. My sister is living proof.

Don't overbake. Start checking at 18 minutes. The center will look slightly underdone and glossy - that's what you want. It firms up to the perfect texture as it cools. Waiting until the center looks fully set in the oven means dry bars on the counter.

Storage

Freezer: Up to 3 months. Wrap individually or layer with parchment in a sealed container. Thaw on the counter or microwave for 30-40 seconds. These also survived a transatlantic flight in a carry-on, so don't underestimate them.

Room temperature: Tightly wrapped, up to 2 days. They make a great post-workout snack too.

Fridge: Airtight container in the refrigerator, up to 5 days. They get a little fudgier in the fridge, which is honestly a good thing.

FAQs

How much protein is in protein pumpkin oat bars?

Each bar has 14g of protein depending on the brands you use, from the vanilla whey-casein powder, unflavored plant protein, peanut butter powder, and Greek yogurt all combined. The exact numbers are in the recipe card.

Can I use rolled oats instead of instant?

Yes, but the texture will be chewier and heartier - closer to a dense granola bar than a soft baked oatmeal. If you go that route, add a splash more almond milk since rolled oats absorb liquid more slowly.

Can I use just one protein powder?

Yes. If you only have the vanilla whey-casein, replace the unflavored powder with an equal weight of oats or oat flour and reduce the almond milk slightly.

Why does the center look wet when I pull them out?

That's correct and intentional. Slightly glossy and just barely set is exactly where you want to pull them. A knife should come out slightly moist, not clean. They firm up a lot as they cool in the pan. If you wait for the center to look fully dry in the oven, the bars will be dry all the way through by the time they cool.

Can I make these dairy free?

Yes. Use a thick plant-based yogurt (coconut or almond, not drinkable) and swap the whey-casein for a plant-based vanilla protein powder like KOS.

Are these a good breakfast option?

Yes - they're filling, not overly sweet, and the protein per bar makes them a solid breakfast. Serve protein pumpkin breakfast bars vanilla yogurt or soak in milk and it's a full meal.

  • ⅓ cup Unflavored Protein Powder (Plant-based), 30g, or Oat Flour

Instructions
