This might be the first recipe I'm posting here in years that's high in protein but doesn't need any protein powder. Why you ask? Well it seemed like 'protein muffins without protein powder' was something that people were searching a decent amount for on Google.

  • Protein Oats - I highly recommend using protein oats for this recipe since these banana muffins have no protein powder in them. The one from Zego that I use is also gluten free if you need.
    • Substitute: Use regular rolled oats; Gluten free if needed. Oat flour is also a great option.
  • Peanut Butter Powder: A real good source of protein and the peanut butter flavor without the added fat of regular peanut butter. I recommend either PB2 or PbFit for this recipe.
    • Substitute: Almond Butter Powder or plain Peanut Butter/Almond Butter or any nut or seed butter. Use less yogurt if using the wet nut butter.
  • Nonfat Plain Greek Yogurt: A powerhouse of protein and adds moisture.
    • Substitute: Low fat or full-fat Greek yogurt, cottage cheese or Coconut Yogurt are good substitutes.
  • Stevia for a touch of sweetness without added sugar.
    • Substitute: You can use maple syrup, honey, or another granulated sweetener instead.
  • Eggs to bind the ingredients and add more protein.
  • Baking Powder and Baking Soda to give these muffins the rise

How to make High Protein Muffins with Greek Yogurt

  1. Preheat & Prep: Preheat your oven to 350°F (175°C) and line 12 cups of a muffin pan with cupcake liners. Llightly spray the insides with cooking spray, or use a non-stick muffin pan.
  2. Combine Ingredients: In a food processor or blender, combine all ingredients: bananas, oats, peanut butter powder, stevia sweetener, baking soda, baking powder, nonfat plain Greek yogurt, and eggs.
  3. Blend: Pulse or blend on low until just combined. You should have a thick muffin batter. Be careful not to overmix!
  4. Fill Muffin Cups: Divide the batter evenly among the prepared muffin cups, filling each about ¾ way to the top. If using, sprinkle chocolate chips on top.
  5. Bake: Bake for 22-25 minutes, or until a toothpick inserted into the center comes out dry.
  6. Cool: Let the muffins cool in the pan for 10 minutes before removing them. Transfer to a wire rack to cool completely, about 15 minutes, and then enjoy!

While this recipe is easy, there are a few things to keep in mind to make these banana protein muffins with no whey protein:

  • Grease the cupcake liners with cooking spray - this will allow the muffins to come off easily!
  • Use completely ripe bananas or the protein muffins won't be sweet enough. For the best natural sweetness and moisture, always use completely ripe bananas with plenty of brown spots. This is especially important since you're relying on natural sugars.
  • Use room temperature eggs and room temperature milk.

  • 2 medium Bananas, 240g, 1 cup mashed
  • 120 g Protein Oats, or regular rolled Oats
  • ¾ cup Nonfat Plain Greek Yogurt, 168g
  • ½ cup Peanut Butter Powder, 48g
  • 2 large Eggs
  • 1½ teaspoon Stevia Sweetener (worth ¼ cup Sugar)
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder

Instructions
