This high-protein mango cheesecake is a no-bake, no-gelatin dessert layered in individual jars, with 19 grams of protein per serving - perfect for a make-ahead dessert or a portable snack you can grab straight from the fridge.

Mango is my absolute favorite fruit - don't even get me started. I grew up with at least three mango trees in my front yard in Goa, and one of them is still known in my house as my tree, because it was just mine. Those mangoes have no comparison; I don't even have the words.
Anyway, so when I finally got some nice mangoes here in the Vancouver area, I looked up popular mango recipes because I wanted to make something with mango. Turns out mango cheesecake is a thing (and not gonna lie, I never actually had one before). Baking seemed like a commitment and a lot of recipe testing to make a macro friendly variation, so I was inclined to make a no bake one. It was quite a tough choice, so I ended up asking my IG audience over a story poll, and here we are with the winner!
A fun extra story - My husband was visiting when I made these (he's still back at home in San Diego), and he froze the half the recipe and took them on his flight back to San Diego. Commitment, but also gave me confirmation that this cheesecake recipe is freezer friendly!
What You Need for These High-Protein Mango Cheesecake Jars
This recipe has three parts - base, cheesecake layer, and mango topping - and every ingredient is doing double duty between texture and protein.

For the base:
- Graham crackers: A crunchy no-bake base without needing melted butter.
- Sub: gluten-free graham crackers work the same, or swap in crushed chocolate cereal if you want something heartier.
- Almond butter: Binds the crumbs together so the base actually holds. I use American Dream Nut Butter Almond Butter (code HAYLSKITCHEN for a discount).
- Sub: peanut butter, cashew butter, tahini, or any other nut or seed butter works.
For the cheesecake layer:
- Nonfat Greek yogurt: The tangy backbone of the filling and a solid protein contributor.
- Sub: low-fat Greek yogurt works, or coconut yogurt for a dairy-free version.
- Low-fat cream cheese: For the classic cheesecake richness and texture.
- Sub: cottage cheese blended smooth can replace some or all of the cream cheese if you want it lighter, or use full-fat cream cheese if you're not watching that.
- Vanilla protein powder (whey-casein recommended): This is what lets the layer set without baking or gelatin. I use Quest Nutrition Vanilla Whey-Casein Protein Powder.
- Sub: plain whey works, but the mixture will be more runny.
- Unflavored collagen or unflavored protein powder (optional): Extra protein with zero flavor impact - skip it if you're happy with a lower protein count per jar. I use Vital Proteins Unflavored Collagen.
- Sub: Isopure Unflavored Whey Proteinworks in place of collagen.
For the mango:
- Fresh mango: A naturally sweet topping layer that needs zero added sugar.
- Sub: frozen mango works too - just thaw and drain any excess liquid first.

Gluten-Free Adaptation
Swap the graham crackers for a certified gluten-free graham cracker or gluten-free cookie crumb. Everything else in the recipe is naturally gluten-free as written.
Dairy-Free Adaptation
Swap the Greek yogurt for coconut yogurt, the cream cheese for a dairy-free cream cheese alternative, and use a plant-based vanilla protein powder like KOS, Truvani, or BIRDMAN Vanilla Fitmingo in place of the whey-casein blend. You'll likely need a little extra sweetener and vanilla extract with these, since plant proteins tend to carry a slightly earthy flavor that the whey-casein blend doesn't have.

How to Make This No-Bake Mango Cheesecake
- Make the base. Crush the graham crackers and almond butter together in a food processor until it forms a crumbly mixture.
- Puree the mango. In a food processor, puree the mango until completely smooth with no chunks.


- Beat the cream cheese mix. Combine the cream cheese, Greek yogurt, protein powder and collagen in a bowl and beat with a hand mixer until completely smooth, with no lumps of cream cheese left.
- Taste the cheesecake mixture. This is about the cream cheese mixture, not the mango - taste it here, and if you want it sweeter, mix in a little stevia or a splash of vanilla extract.


- Layer the crust. Divide the crushed crumb mixture evenly among 4 jars, pressing it lightly into the bottom of each one.
- Layer the cheesecake. Divide the cheesecake mixture among the jars, spooning it evenly over the crust in each.
- Top with mango. Spoon the mango puree over the top of each jar.
- Chill. Refrigerate for 2 to 3 hours, until the cheesecake layer has fully set.



Tips for the Best Mango Cheesecake Jars
- Use small jars for portion control, or one larger dish if you'd rather serve it family-style.
- Use ripe mango. The riper the mango, the sweeter the topping.
- Beat the cream cheese and yogurt until fully smooth before adding the protein powder. Any lumps at this stage won't work themselves out later.
- Give it the full chill time. A partially set layer won't hold its shape when you dig in with a spoon.
- These freeze better than you'd expect. My husband froze one of these jars and took it on a flight - it held up completely fine once thawed.

10/10 recommend using good hand mixer for the cream cheese frosting. I love this cordless one from KitchenAid, but you can use the regular one too.
How to Store Mango Cheesecake Jars
Fridge: Store covered for up to 4 days.
Freezer: These freeze well - freeze covered for up to 1 month and thaw overnight in the fridge before eating.
No-Bake Mango Cheesecake Variations
- Cardamom Mango Cheesecake: Add a pinch of ground cardamom to the cheesecake layer for a warm, floral note.
- Tropical Mango Cheesecake: Swap in some fresh pineapple alongside the mango for extra tang.
- Berry Mango Swirl: Layer in a few crushed berries with the mango topping.
- Extra Crunch: Save a spoonful of the crushed graham mixture to sprinkle on top before serving.
