Have you guys seen that unbelievingly gooey cookie trend taking over your feeds? This viral scoopable cookie was trending so much on IG while I was traveling, and it looked unbelievably indulgent. I first saw it popping up everywhere while I was visiting Lisbon, and the FOMO continued while I was in San Diego visiting my husband.

As soon as I finally got back to my own kitchen, I put up a poll on my Instagram stories asking what you guys wanted to see next. You guessed it-this was the absolute number one request! I had to get to it immediately so we didn't miss out on the trend. I revamped the original to create a healthy viral scoopable cookie that fits our macros, and I really hope you love it!

Ingredients for Scoopable Protein Cookie

Here is what you need to whip up this high protein and low fat scoopable cookie (be sure to check the recipe card at the bottom for exact measurements!):

  • Vanilla Protein Powder (Whey-Casein Blend): To get that underbaked texture without getting a dry, rubbery, or flat cake, you must use a Whey-Casein Blend. Pure whey gets tough in "underbaked" recipes, but casein locks in moisture from the applesauce, ensuring it stays soft and fudgy.
    I used Quest Nutrition Vanilla Protein Powder.
  • Flour: Regular all-purpose, whole wheat pastry or a 1:1 gluten-free blend works great.
  • Peanut Butter Powder: Adds a rich, roasted peanut flavor without the extra fat.
    I love PB2 or PbFit.
    • Sub: Almond Butter Powder or ¼ cup flour + 1 tablespoon peanut or almond butter 
  • Coconut Flour: Highly absorbent, helping to thicken the dough while keeping carbs low.
  • Zero Calorie Sugar Alternative: Adds a bit of sweetness and that deep cookie flavor, but without the sugar crash.
    I love using a monk fruit one from Lakanto.
    • Sub: Regular coconut sugar or brown sugar
  • Baking Soda
  • Unsweetened Applesauce: The secret ingredient to add moisture without the oil and butter, keeping it low fat.
    • Sub: Pumpkin Spice or Mashed Banana; But this will alter the flavor a bit.
  • Eggs (Whole + Whites): Binds the dough together while keeping the fat low and the protein super high.
  • Almond Butter: Just a tiny spoonful adds necessary richness and healthy fats.
    • Sub: Peanut Butter, Tahini, Cashew Butter, or any nut or seed butter.
  • Sugar-Free Chocolate (or Chocolate Chips): Because it just isn't a cookie without big pools of melted chocolate 🙂

In a medium mixing bowl, you must thoroughly whisk together your dry ingredients: the flour, both peanut butter powder and vanilla protein powder, coconut flour, zero-calorie sugar alternative, and baking soda. This is a critical step because protein powders can easily clump. Whisking first ensures an even distribution of the baking soda for a perfect rise, preventing any flat or dense spots in your cake.

Combine the Moist Wet Ingredients

In a separate large bowl, whisk together the unsweetened applesauce, the whole egg, egg whites, and almond butter until the mixture is completely smooth.

Mix but Don't Over-Mix

This is the most critical step. Pour your dry mixture into the wet bowl and swap your whisk for a large rubber spatula. Gently fold the ingredients together just until combined. Stop the exact second the last dry patch disappears! Over-mixing will activate the unique fibers in the protein powder and the gluten in the flour, turning a delicate, underbaked, gooey cookie into a dense, tough, rubbery mess.
