I had a lonely frozen pie crust in the freezer I wanted to use up, my husband had been begging for apple pie all week, and I know he absolutely loves my lasagna recipes. So, I figured, why not combine the two into one epic, macro-friendly creation?

And let me tell you, the result was magic. I gave my husband a slice-just a small taste, mind you, while I was filming his reaction for Instagram-and he just stopped. He ate the whole slice, right there on the spot! He looked at me and said, "You've completely outdone yourself with this one."

Plus, the apple pie filling came out so perfectly spiced and thick, I'm now planning on posting it as a separate recipe!

This easy apple pie lasagna uses smart swaps to boost protein and cut down on sugar and fat.

The Crust

  • Frozen Ready-to-Bake Pie Crust (like Pillsbury): The foundation of our apple pie lasagna, providing a satisfying, buttery crunch you get from a pie.

Apple Pie Filling

  • Chopped Apples: The heart of the filling!
  • Water: Used to help the apples soften and caramelize without relying on butter or oil.
  • Zero Calorie Brown Sugar (or regular): Provides that deep, molasses-like sweetness essential for a perfect apple filling. I use Lakanto.
  • Cinnamon and Ground Nutmeg: The perfect spice blend for that old-fashioned apple pie flavor.
  • Unflavored Collagen & Water (for slurry): The secret to achieving that thick, apple pie filling consistency without cornstarch or flour.
    I recommend Vital Proteins.

For the Protein Pudding

  • Non-fat Greek Yogurt for extra high protein, or coconut yogurt
  • Vanilla Protein Powder; I used half whey-casein from Quest Nutrition and half whey from Peachie Spoon.
  • Sugar free Cheesecake flavor Instant Pudding Mix: Simply Delish for a Vegan and sugar free recipe, or Jello.
  • A bit of Unsweetened Almond Milk

The Topping:

  • Reduced Fat Cool Whip - A light and airy topping that is easy to mix with protein.
  • More Vanilla Protein Powder from Peachie Spoon 
  • Caramel Sauce or Peanut Butter
  • Cocoa Powder for dusting

Alternate Ingredients for a Low-Calorie Apple Lasagna Dessert

One of the best things about this apple lasagna dessert low calorie style is how flexible it is!

  • Pie Crust: You can use graham cracker crumbs mixed with melted light butter for a no-bake apple pie lasagna version, or use a whole-wheat crust for added fiber.
  • Cheesecake Pudding Mix: If you can't find cheesecake flavor, vanilla or white chocolate instant pudding mix will work perfectly.
  • Protein Powder: Any brand of vanilla whey or casein protein powder should work well here. If using plant-based protein, you might need a little extra sweetener or vanilla extract to adjust the flavor, ane milk to adjust the thickness.
  • Apples: Feel free to mix up the types of apples! Granny Smith (for tartness) mixed with Honeycrisp (for sweetness) is a winning combination.
  • Collagen: If you don't have collagen, you can substitute it with 1 Tbso cornstarch instead!
  • Sugar-free Cool Whip - Feel free to use any whipped topping! Even a dairy free version works.

How to Make Healthy Apple Pie Lasagna

Follow these steps to create your perfect apple pie lasagna recipe!

Pie Crust

  1. Preheat the oven to 450°F (232°C).
  2. Roll your ready-to-bake pie crust into a 9x9-inch pan dish (or use a pre-rolled crust). Trim the sides if necessary.
  3. Bake for 12-15 minutes or until golden brown.
  4. Remove the crust from the oven and let it cool completely (this usually takes about 25 minutes).

Apple Pie Filling

  1. Heat a large skillet over medium heat. Add the chopped apples and 2 tablespoons of water. Cook until the apples begin to soften and the water has dried up.
  2. Add more water, the zero-calorie brown sweetener, cinnamon, and nutmeg. Cook for about 5-6 minutes, shaking the pan occasionally, until the apples are slightly caramelized. Continue adding water as needed to prevent sticking. The apples should be caramelized but still have some extra liquid in the pan.
  3. In a small bowl, stir together the collagen and 1-2 tablespoons of water to form a slurry.
  4. Turn off the heat, pour in the collagen slurry, and stir quickly to thicken the apple mixture. You should achieve a true apple pie filling consistency.
    Tip: Don't Overcook the Apples: The apples should be soft but still have a slight bite to them. This provides great textural contrast against the smooth pudding.
  5. Transfer the filling to a bowl and let it cool for 5-10 minutes.

  1. In a bowl, mix the Greek yogurt, protein powder, instant pudding mix, and almond milk (add the milk gradually) until the mixture is completely smooth and creamy.
    Tip: Taste the mixture and make sure you like it; Add extra sweetener or vanilla extract if you need!

  1. In a separate bowl, mix the thawed Cool Whip topping and protein powder until just combined and fluffy.
    Tip: Use thawed cool whip topping (not frozen) so that it actually spreads easily.

Assemble and Chill

Make sure both the crust and the apple filling are completely cool before you assemble the layers. This prevents the pudding layer from melting or becoming runny.

  1. Spread the pudding mixture evenly over the cooled pie crust.
  2. Top with the apple pie mixture, spreading it to cover the entire surface.
  3. Carefully spread the cool whip mixture on top of the apple layer.
  4. Cover the pan with plastic wrap and chill for 2-4 hours in the fridge. This is crucial for the layers to set!
    Tip: Don't skip this! This allows the instant pudding to set the Greek yogurt, ensuring your apple pie lasagna with Greek yogurt slices cleanly.
  5. Drizzle with some caramel syrup or peanut butter. Cut into 9 pieces and enjoy your delicious thanksgiving lasagna dessert!

Ingredients

Crust:

  • 1 Frozen Ready-to-Bake Pie Crust, like Pillsbury

Pudding:

  • 2 cups Non-fat Greek Yogurt, 450g
  • ⅔ cup Vanilla Protein Powder, 60g
  • ¼ cup Sugar-free Cheesecake flavor Instant Pudding Mix, 30g, or Vanilla
  • ¼ cup Unsweetened Almond Milk, 60ml

Apples:

  • 2 Chopped Apples, about 360g
  • ¼-⅓ cup Water, 60-80ml
  • 2 tablespoon Zero Calorie Brown Sugar, 6g, or regular
  • ¾ teaspoon Cinnamon
  • ¼ teaspoon ground Nutmeg
  • 20 g Unflavored Collagen
  • 2 tablespoon Water, 30ml

Topping:

  • 4 oz Sugar Free Cool Whip, 1½ cups, 112g, Thawed
  • ⅓ cup Vanilla Protein Powder, 30g
  • Caramel Syrup or Peanut Butter

Instructions

Pie Crust:

    You should have an apple pie filling consistency.
  • Transfer to bowl and let cool 5-10 min.

Pudding:

  • In a bowl, mix Greek yogurt, protein powder, instant pudding, and milk (little at a time) until smooth.

Cool Whip:

  • Mix cool whip topping and protein powder in a bowl until just combined.

Assemble:

  • Spread pudding mixture evenly over cooled pie crust.
  • Top with apple pie mixture, covering the whole surface.
  • Spread cool whip mixture on top of pudding.

Chill & Serve:

  • Cover with plastic wrap and chill 2-4 hours in the fridge.
  • Drizzle on some caramel syrup or peanut butter.
  • Cut into 9 pieces and enjoy.

    Okay first off this recipe was way easier than I thought, literally was assembled before I even knew it. I went to the store looking for the rollable pie crust but didn't find it so bought 2 premade pie bases. Boi am I glad I got 2 crusts. This was fireeeeeeee (with more e's lol). Had to put it away from me so I don't finish it in 1 go 🙂
