Individual Pumpkin Tiramisu is an no-bake Fall dessert you're going to love. This easy recipe uses coffee-soaked rice cakes layered with a high protein, low fat pumpkin cream to create a single-serving treat with 34g of protein.

After seeing how much love my classic rice cake tiramisu got, I knew I had to make a seasonal special for pumpkin season. To be honest, I actually wasn't expecting it to be this good; Maybe because I'm not usually a fan of pumpkin spice foods.
But even then, this was AMAZING! Husband was definitely looking for more after we split this, haha.
Ingredients for Rice Cake Tiramisu
This high protein rice cake tiramisu uses rice cakes instead of ladyfingers and is sweetened with protein powder for a healthy dessert alternative. Plus, it's gluten-free and dairy-free, making it a great option for those with dietary restrictions.
- Rice Cakes; I recommend caramel rice cakes, but regular plain ones work too
- Brewed Coffee: The essential soaking liquid to give your dessert that classic, rich tiramisu flavor.
- Reduced Fat Cream Cheese
- Non-fat Greek Yogurt: Boosts the protein content and lightens up the texture of the cream.
- Pumpkin Puree (Make sure its not pumpkin pie filling)
- Vanilla Protein Powder; This is the source of sweetness to make a no-sugar rice cake pumpkin tiramisu recipe; I used Quest Nutrition's Vanilla protein powder
- Pumpkin Pie Spice
- A bit of Unsweetened Almond Milk to help htin the mixture. Avoid this if you use whey protein.
- Unsweetened Cocoa Powder for dusting.

How to Make the best Rice Cake Pumpkin Tiramisu
Just before serving, use a sieve to dust the top with unsweetened cocoa powder.
- Make the pumpkin cream filling by beating the cream cheese, Greek yogurt, pumpkin puree, vanilla protein powder, pumpkin pie spice and milk (only add as little as needed).
Tip: Make sure the cream cheese is fully softened so your pumpkin cream mixture is completely smooth and has no lumps.


- Soak the Crust: Quickly and gently dip one rice cake into the brewed coffee, then immediately place it into a large ramekin or serving dish.
Tip: Be quick! Rice cakes absorb liquid very quickly, so soaking too long will make them soggy and hard to handle.


- Layer One: Spread half of the pumpkin cream mixture over the soaked rice cake, using the back of a spoon to create an even layer.
- Layer Two: Repeat the process: dip the second rice cake in coffee and place it on top of the cream, followed by the remaining pumpkin cream mixture.


- Cover the dish and place it in the refrigerator for at least 1 hour.
Tip: Don't skip the resting time since it is needed for the flavors to blend. - Dust with cocoa powder and enjoy!

Instructions
- In a bowl beat softened cream cheese, Greek yogurt, pumpkin puree, vanilla protein powder, pumpkin pie spice and milk(as needed).
