The best easy Caramel Tiramisu recipe that’s high-protein and low sugar made with caramel rice cakes and protein powder. The ultimate macro-friendly caramel toffee tiramisu is a decadent, healthy dessert that hits your protein goals!

Inspiration for this magical thing came from Instagram, haha. I think I saw someone post a toffee tiramisu with the Heath toffee bits, and I had a bunch lying from when I made the healthy better than sex cake sometime ago. Put it together with the last 2 caramel rice cakes I had, and this is what came to be.

If you love the combination of rich coffee, creamy filling, and crunchy toffee, this caramel toffee tiramisu is about to become your new obsession. It's a salted caramel tiramisu recipe alternative that hits all the right notes: sweet, salty, tangy, and bold.

By using caramel rice cakes instead of lady fingers, you get that perfect "soaked" texture that you get from a traditional tiramisu but with a fraction of the effort and much better macros.

Ingredients for Caramel Toffee Tiramisu

This high protein caramel toffee tiramisu uses caramel rice cakes instead of ladyfingers and is sweetened with protein powder - healthy dessert alternative. Plus, it's gluten-free and easily dairy-free, so a great option for those with dietary restrictions. 

  • Caramel Rice Cakes: The base of our toffee tiramisu.
  • Brewed Coffee: For that classic tiramisu vine.
  • Low Fat Cottage Cheese: These create a thick, tangy, and high-protein "mascarpone" substitute.
  • Nonfat Greek Yogurt: To add extra protein and creaminess.
  • Vanilla Whey Protein Powder: To give the cream its sweetness and the protein! I recommend Legion Whey or Quest Whey-Casein.
    To make it better: Salted Caramel Protein Powder
  • Peanut Butter Powder like this one from PB2 or PBFit.

  • Toffee Bits: Adds crunch and the toffee flavor.
  • Unsweetened Cocoa Powder: For the classic dusted finish.

Alternate Ingredients & Tips for Caramel Tiramisu

  • Coffee: If you aren't a fan of caffeine, you can use decaf coffee or even milk flavored with caramel syrup.
  • Caramel Rice Cakes: Use regular rice cakes! Or even lady fingers.
  • Low Fat Cottage Cheese: Swap for regular cottage cheese, softened cream cheese or mascarpone.
  • Nonfat Greek Yogurt: Regular Greek yogurt or Coconut yogurt works.
  • Peanut Butter: Replace with almond butter or cashew butter.
    If you have a nut allergy, use sunflower seed butter or tahini.

Instructions: How to Make Caramel Toffee Tiramisu

  • Make the Caramel Cream: In a bowl, combine the cottage cheese, Greek yogurt, vanilla protein powder, peanut butter powder, and peanut butter. Use an immersion blender or food processor to blend until completely smooth and silky.
    Tip: Add milk if the mixture is too thick
    Tip: Taste the mixture and add extra sweetener or vanilla extract if needed.
  • Soak the Base: Dip one caramel rice cake into the brewed coffee. Transfer it immediately into a large ramekin.
    Tip: Be quick but gentle. You want them to absorb the coffee without falling apart before they hit the ramekin.
  • Layer: Spread half of the caramel cream mixture over the rice cake, smoothing it out with the back of a spoon. Sprinkle on half of the toffee bits.
  • Repeat: Repeat the process with the second rice cake and the remaining cream.
  • Chill: Cover and refrigerate for at least 1 hour. This is the secret to a great easy caramel tiramisu recipe-it allows the flavors to meld and the rice cake to soften into a cake-like texture.
    Tip: Don't skip the resting time since it is needed for the flavors to blend.
  • Garnish: Just before serving, use a sieve to dust the top with unsweetened cocoa powder and finish with the remaining toffee bits.

Equipment

10/10 recommend using good immersion blender here. I love this cordless one from KitchenAid, but you can use a regular one too.

Or use a powerful blender. This one is not only powerful, but also quite aesthetic, haha.

Storage for Healthy Caramel Toffee Bits Dessert!

  • Fridge: This caramel tiramisu needs to be stored in the refrigerator; Cover (airtight) and keep for 3-4 days.
  • Freezer: Not recommended for freezing, as the cream/yogurt base may change texture upon thawing.

Ingredients

  • 2 Caramel Rice Cakes, 18g
  • ⅓ cup Brewed Coffee
  • ¼ cup Low Fat Cottage Cheese, 56g
  • ¼ cup Non-fat Greek Yogurt, 56g
  • ⅓ cup Vanilla Whey Protein Powder, 30g
  • 1 tablespoon Peanut Butter Powder, 6g
  • 2 teaspoon Peanut Butter (Caramel flavor recommended), 10g
  • 1 tablespoon Toffee Bits, 15g
  • 1 teaspoon Unsweetened Cocoa Powder

Instructions

  • In a bowl combine cottage cheese, Greek yogurt, vanilla protein powder, peanut butter powder and peanut butter.
    Use an immersion blender or food processor.
  • Dip rice cake in coffee, transfer into large ramekin (be quick but gentle).
    Spread half caramel cream mixture on top (smoothen with back of spatula or spoon).
    Sprinkle on half the toffee bits.
  • Repeat with second rice cake + remaining caramel cream.
  • Cover and refrigerate 1 hour.
    This helps the flavors mold together.
  • Dust with cocoa power (use sieve) and top with remaining toffee bits.
