Honestly, I had this question, so you might be wondering, "what is lazy cat cake?" The "Lazy Cat Cake" gets its name because it's a minimal-effort cake, like a lazy cat lounging around!
And then of course there's the crunchy topping on top looks a bit like cat food.

Ingredients
This healthy lazy cat cake is made with healthy and basic ingredients for a treat that's stil indulgent!
- Chocolate Protein Powder needed for a high protein chocolate cake bse and also replaces the 'sugar'.
I used Whey-Casein Chocolate protein powder from Quest Nutrition. - Flour
- Unsweetened Cocoa Powder
- Baking Powder
- Unsweetened Almond Milk
- Unsweetened Applesauce
For Cream Cheese Frosting
- Reduced Fat Cream Cheese
- Nonfat Plain Greek Yogurt
- Vanilla Protein Powder; This is the source of sweetness to make a sugar-free cream cheese frosting; I used Quest Nutrition's Vanilla protein powder
- A bit of Unsweetened Almond Milk
Chocolate Protein Ganache
- Sugar Free Chocolate: Lily's chocolate bar or chocolate chips are lovely.
- Chocolate Whey Protein Powder - I recommend American Dream Nut Butter (use my code HAYLSKITCHEN for 10% off) since its really rich in chocolatey flavor. Isopure is another good option.
- Unsweetened Almond Milk
Crunchy Topping:
- Rice Krispies Cereal
- Cocoa Powder

Alternate Ingredients & Swaps for Healthy Lazy Cat Cake
- This healthy lazy cat cake recipe can be as versatile as you'd like. Here are some options:
- Flour: You can use all-purpose flour, whole wheat pastry flour or a 1:1 gluten-free baking flour.
- Protein Powder: If you don't have a whey-casein blend, you can either make your own or use a plant-based protein powder. I recommend KOS, Truvani or Birdman Chocolate plant protein; Be sure to add a bit of vanilla extract and sweetener to makeup for the Earthy-taste.
- Milk: Any unsweetened milk (soy, oat, cashew or even dairy milk) works well throughout the recipe.
- Applesauce: If you don't have unsweetened applesauce, an equal amount of mashed ripe banana or pumpkin puree can be used, though the flavor might come through.
- Reduced Fat Cream Cheese: Feel free to use full-fat cream cheese, or even a dairy-free alternative.
- Nonfat Plain Greek Yogurt: Regular Greek yogurt or a thick plant-based Greek-style yogurt like Coconut yogurt also work.

How to Make The Best Chocolate Crunch Cake (Lazy Cat Cake)
Although it looks elaborate, this protein lazy cat cake is really easy to make:
- Preheat Oven & Prepare Pan: Preheat your oven to 350°F (175°C). Line an 8x8" baking pan or dish with parchment paper (be sure to leave an overhang on the sides for easy removal later).
- Mix Dry Cake Ingredients: In a large mixing bowl, whisk together the chocolate protein powder, flour, cocoa powder, and baking powder.
- Add Wet Cake Ingredients: Add the unsweetened applesauce and almond milk to the dry mixture. Gently fold the ingredients together using a spatula or spoon.
- Bake the Cake: Pour the batter evenly into the prepared 8x8" pan. Bake for 15-20 minutes. The cake is ready when a tester (knife or toothpick) inserted into the center comes out clean but moist.
- Cool Completely: Remove the cake from the oven and let it cool completely in the pan on a wire rack. This is crucial before poking holes and adding fillings.
- Prepare Protein Milk: While the cake cools, prepare the protein milk. In a small bowl, whisk together the almond milk andchocolate whey protein powder until smooth.

- Cool Cake Completely: Ensure your cake is fully cooled before poking holes and adding the wet fillings. If the cake is warm, the fillings will melt and make it soggy.
- Soften the Cream Cheese: Soft cream cheese is essential for a smooth, lump-free frosting.
- Adjust Ganache Consistency: If your ganache is too thick, add a tiny bit more milk (half a teaspoon at a time). If it's too thin, you can add a tiny bit more protein powder, but be careful not to make it grainy.

10/10 recommend using good hand mixer for the cream cheese frosting. I love this cordless one from KitchenAid, but you can use the regular one too.
