I was catching up on IG this Saturday on my way to church and saw this unbelievably indulgent blueberry cheesecake croissant from The Salty Cooker. I posted a story sharing the post and asked if you guys wanted a healthy, high-protein, lower-calorie version of this pastry and the response was a very strong YES!
The timing was quite perfect, coz I was going to Whole Foods just after church for my weekly grocery run. Croissants were purchased and I put together this beautiful concoction the very next afternoon. Oh MAN was that a good decision?!
And guess what, I looked it up and turns out the Costco bakery has a blueberry cheesecake croissant - you know, the ones that look incredible but aren't exactly "macro-friendly".

This recipe comes together in just a few super simple steps. No fancy kitchen skills required, promise!
Simmer the Jam: Throw your blueberries, monkfruit, and a tiny splash of water into a small pan. Let it bubble for about 2 minutes until the berries burst and turn into a glossy, thick jam.


Blend the Filling: Combine the yogurt, cottage cheese, and protein powders in a bowl. Grab your immersion blender and blend everything until it looks like a rich, velvety cheesecake frosting.

Making these sugar free blueberry croissants is really really easy, but here's some pointers so you can get it perfect!
- Use day-old croissants! You want them to be soft so they can cut easily, and then bake to turn crispy and flaky as a bakery-level blueberry stuffed croissant.
Fresh croissants would not be easy to work with.
- I suggest using a whey casein blend for the thickest cheesecake texture. Whey-only can sometimes make the filling a bit runny.
That said, if the mixture feels too thick you can stir in a small splash of almond milk!
- The Immersion Blender Secret: To get the most authentic bakery texture for your healthy Costco blueberry cheesecake croissant, you must blend your cottage cheese until it is perfectly smooth. Absolutely no lumps allowed in a proper cheesecake filling!
10/10 recommend using good immersion blender here. I love this cordless one from KitchenAid, but you can use a regular one too.
- The "Pocket" Cut: When slicing your pastry, don't go all the way through. Leaving the back edge attached creates a secure pocket that holds all that delicious filling inside, ensuring your low calorie blueberry cheesecake croissant doesn't spill out and turn into a messy disaster in the oven.

Ingredients
- 1 large Croissant, 70g (or 2 small)
Filing:
- 3 tablespoon Nonfat Greek Yogurt, 42g
- 2 tablespoon 2% Fat Cottage Cheese, 28g
- 2 tablespoon Vanilla Protein Powder (Whey-casein), 11g
- 2 tablespoon Unflavored Protein Powder (Whey), Optional, 11g
Blueberry Jam:
- ½ cup Blueberries, 75g
- ½ teaspoon Zero Calorie Monkfruit Sweetener

Instructions
- Preheat and Prep: Preheat your oven to 375°F (190°C) and line a small baking sheet with parchment paper.
- Make the 2-Minute Jam: In a small saucepan over medium heat, combine the blueberries, monkfruit sweetener, and a splash of water. Simmer until the berries burst and the mixture thickens into a jam; be sure to stir frequently and add more water as needed.Remove from heat and let cool.
- Blend the Cheesecake Filling: In a small bowl, combine the Greek yogurt, cottage cheese, vanilla protein powder, and unflavored protein powder.Use an immersion blender to blend until completely smooth and creamy.
- Slice and Stuff: Slice your croissant horizontally, leaving the back intact so it opens like a book. Spread most of the cheesecake filling inside, followed by most of the blueberry jam.
- The Topping: Gently close the croissant. Spread the remaining cream and blueberry jam on top.Optionally, top with sliced nuts or seeds for that bakery look!
- Bake: Place the croissant on your prepared baking pan and bake for 10 minutes until the croissant is golden-crisp and the filling is warm.
