It was my birthday last month, and I had been talking my husband's ear off about this viral bakery in San Diego that I'd been following on IG for a while. I kept going on and on about it, and he actually planned my entire birthday celebration to start right at that bakery! ❤️
It was pure croissant indulgence bliss! We balanced it out with a salad and a breakfast sando, but the absolute star of the show was their tiramisu croissant. I literally have no words for how good it was; it legit left me speechless!
Fast forward to this week: I had exactly one extra croissant left over after making my Blueberry Cheesecake Croissant, and I instantly knew what I had to make. I even took a break between work on a Thursday afternoon to create this Healthy Tiramisu Croissant. One of the best-spent break, haha. I ended up eating a whole half croissant as part of my 'taste test' when filming the recipe. It was that good!

- Large Croissant: A stale one also works!
- Sub: Two mini croissants or a gluten-free croissant work perfectly too.
- Nonfat Greek Yogurt: For the mascarpone-y tang but with protein and lower calories.
- Sub: Any low-fat or whole-milk Greek yogurt. A thick dairy-free yogurt like coconut yogurt also works.
- 2% Fat Cottage Cheese: This is fort he cheesecake vibe. When blended, this is the secret to a rich, creamy, and macro-friendly filling.
- Sub: Mascarpone or light cream cheese or even ricotta cheese if you aren't a fan of cottage cheese.
- Vanilla Protein Powder (Whey-Casein): This is the sweetener for the cream since we are going for a sugar free recipe! I use Quest Nutrition here.
- Unflavored Collagen: An extra boost of protein! I use Vital Proteins is the one I use!
- Sub: You can skip this or use unflavored protein powder.

How to make a Low Calorie Tiramisu Croissant
This recipe is extremely easy and takes less than 10 minutes from start to finish. Here is how to bring that bakery magic to life at home:
- Slice and Soak: Cut your croissant open horizontally, making sure to leave the back edge attached like a book. Grab a pastry brush or a spoon and coat both of the inside surfaces generously with your brewed espresso or strong coffee.
- Bake to Crisp: Close the croissant up, pop it on a parchment-lined baking sheet, and bake at 375°F for 7 to 8 minutes. This toasts the pastry and lets that rich coffee flavor get properly absorbed. Let it cool for 5 minutes after it comes out.

Making these sugar free almond croissants is really really easy, but here's some pointers so you can get it perfect!
- Bake the croissants after brushing with coffee! This helps the coffee flavor really soak into the pastry.
- Use a whey casein blend for the thickest cream. Whey-only can sometimes make the filling a bit runny. If you use this, I would recommend skipping the unflavored collagen, or avoiding over-blending.
- Use an Immersion Blender to get the perfect velvety texture! Using a hand-mixer or food processor might leave lumps. I love this cordless one from KitchenAid, but you can use a regular one too.
- Dunk it in coffee when serving to take this simple croissant dessert to the next level!

Storage tips for Protein Tiramisu Stuffed Croissant
Because the creamy filling is added after the croissant is baked and crisped, this tiramisu breakfast croissant is best eaten fresh!
If you do have leftovers, keep them in an airtight container in the fridge for up to 2 days. You'd have to let it come to room temperature or eat it cold straight from the fridge so the yogurt cream doesn't melt!
Another option is removing the cream filling and topping, then reheating the croissant in an air fryer at 375°F for 3-4 minutes, and re-assembling the pastry.

- 2 tablespoon 2% Fat Cottage Cheese, 28g

Instructions
