High protein pumpkin mug cake takes 45 seconds and delivers 29.3g of protein with real chocolate chunks in every bite. One mug, one microwave, done. No oven, no waiting, no full batch of something you have to portion out and store.

I made a version of this recipe back in 2019, in the early days of Hayl's Kitchen. It was good. I remember it being good. But that was before I started building everything around protein, so it was overdue for a redo.
October hit, which meant it was time to get to the pumpkin recipes, and I decided to start with the easy ones. That pumpkin pecan loaf I've been wanting to make will have to wait its turn.
I made this one when my husband was visiting, and I only made one mug cake, so we split it. Lesson for next time: make two.
Why You'll Love This Recipe
- Ready in under a minute. No oven, no waiting for a full cake to bake and cool, just a mug and a microwave.
- 29.3g of protein per serving. Most of that comes from the protein powder and egg white, not an add-on scoop stirred in after.
- Real chocolate chunks, not a drizzle. Chopped Lily's dark chocolate gets folded into the batter and pressed on top, so every bite has some.
- One mug, minimal dishes. Mix it straight in the mug you're microwaving it in.
- Flexible. Works as breakfast, a post-workout snack, or dessert.

Ingredients for High Protein Pumpkin Mug Cake
A few ingredients, each one doing something specific - that's what keeps a mug cake from turning gummy or bland.
- Vanilla whey-casein protein powder: the main protein source, and whey-casein holds up better in a quick microwave bake than straight whey isolate does, using Quest Nutrition Vanilla Whey-Casein Protein Powder.
- Sub: if you're using a straight whey protein instead, bump the flour up to ¼ cup so the cake still sets.
- Flour: gives the cake its structure.
- Sub: oat flour works here too, if you want a pumpkin oat mug cake instead.
- Baking powder: what gives the cake its rise in 45 seconds.
- Pumpkin pie spice: the cozy fall flavor.
- Sub: cinnamon plus a pinch of nutmeg and ginger if that's what you have.
- Canned pumpkin puree: adds moisture and the pumpkin flavor.
- TIP: grab plain pumpkin puree, not pumpkin pie filling. Pie filling already has added sugar and spice mixed in, and it'll throw off both the macros and the texture.
- Egg whites: binds everything without adding the fat a whole egg would.
- Sub: 1 whole egg, if you don't mind the extra fat.
- Sugar-free chocolate: the whole reason this is a chocolate chunk pumpkin mug cake and not just a pumpkin mug cake, using chopped Lily's Dark Chocolate Chips.
- Sub: Lily's Milk Chocolate Bar if you want it less bitter.
Dietary Adaptations
Gluten-Free
Swap the flour for a 1:1 gluten-free baking flour, or use the oat flour sub above with certified gluten-free oat flour. Make sure your protein powder is labeled gluten free too.
Dairy-Free
Whey-casein is dairy. Use a plant-based vanilla protein powder like KOS Plant Vanilla instead, and keep the flour at ¼ cup since plant proteins behave more like straight whey here. And if you love dairy-free single serve bakes, my mug cake recipes have a lot of options worth scrolling through
How to Make Pumpkin Mug Cake Healthy and High Protein
This whole recipe lives in one mug, no bowls to wash.
1. Mix the Dry Ingredients: In your mug or microwave-safe bowl, stir together the protein powder, flour, pumpkin pie spice, and baking powder until there are no clumps of protein powder left.
2. Add the Wet Ingredients: Add the pumpkin puree and egg white. Mix until just combined. Overmixing is what turns a mug cake dense instead of light, so stop as soon as it looks combined.
Taste the mixture and add a pinch of stevia sweetener if needed.

3. Fold in the Chocolate: Fold in most of the chopped chocolate, saving a few pieces to press into the top before it microwaves.
4. Microwave: Microwave on high for 45 seconds. The top should look cooked but still a little wet in the very center. That's the cake carrying over and finishing as it sits, not an undercooked cake.
I do the same slightly-wet-center approach for my cinnamon protein mug cake - pull it just before it looks fully done and it's SO much better than waiting the extra few seconds.

Tips for the Best High Protein Pumpkin Mug Cake
- Don't overmix. Stop as soon as the batter looks combined. Overmixing is what turns a mug cake rubbery.
- Underbake slightly. A slightly wet-looking center at 45 seconds finishes cooking from residual heat. A fully dry top usually means it's overdone.
- Use whey-casein, not straight whey. It bakes up with better structure in a 45 second cook. If whey isolate is all you have, add the extra flour noted in the ingredients.
- Watch your pumpkin can. Puree and pie filling look nearly identical on the shelf, but filling will make the batter sweeter and wetter than this recipe is built for.
- Double it if you're sharing. I split mine with my husband because I only made one. Make two mugs if you'd each rather have your own.

Storage
- Fridge: Cover the mug and refrigerate for up to 4 days. Microwave for 15-20 seconds to warm back up.
- Freezer: Freeze in an air tight container up to 1 month but I recommend just having it fresh.
FAQs
The numbers speak for themselves: 248 calories, 29.3g of protein, and 2.9g of sugar per mug cake. The protein comes from whey-casein powder and egg white pulling double duty, and the sugar stays that low because there's no added sweetener in the batter and the chocolate chips are sugar-free.
Pumpkin puree is just cooked, mashed pumpkin with nothing added. Pie filling has sugar and spices already mixed in, which will throw off both the sweetness and the texture here. Make sure the label says 100% pumpkin.
Yes, it's a straight 1:1 swap and everything else stays the same. Oat flour will change the macros slightly and adds a little more carbs, but the texture holds up fine.
Not really. The 2 tablespoons of flour are what give the cake structure in a 60-90 second microwave bake. Without it you're looking at a pudding situation, which isn't the worst thing but it won't hold together like a cake.
Whey-casein works best here because the casein keeps the texture from turning rubbery in the microwave. A straight whey powder can work but tends to get a little spongy. Unflavored protein will also work, just add a little extra pumpkin spice to make up for the lost flavor.

Variations
- Pumpkin oat mug cake: swap the flour for oat flour, per the sub above.
- White chocolate chunk: use Lily's White Chocolate Bar instead of dark.
- Spiced up: add a pinch of cinnamon on top before microwaving for extra fall flavor.
- Two mug version: split the batter between two smaller mugs and microwave each for about 30 seconds, checking for doneness.
And if you want even more single serve ideas, my single serve protein banana bread is proof that one-portion bakes will satisfy you all over.
