The ultimate no-oil but still crunchy Egg White Granola recipe! A low-fat, low-sugar, and high-volume cereal hack made with egg whites for huge, satisfying clusters.

I actually first made this recipe about six years ago, but I decided to recreate it just now and put up some fresh pictures and a demo video after someone remade it and left a comment on this post!
I recently moved to Canada and didn't have all my baking spices on hand yet. But I absolutely refused to buy a brand new bottle of cinnamon; even the smaller jar is just too much quantity because I have a really big bag stash back home in San Diego. So I literally texted my landlord to borrow some, lol. That is how dedicated I was to making this!
I did set aside a little bag ful to give him as a thank-you gift though 🙂
The rest of it I snacked by dipping those clusters into peanut butter as a chips-and-dip situation. Don't judge; try it with the high protein Grandma's Fudge peanut butter from American Dream (code HAYLSKITCHEN gives you 10% off) and you're going to know what I'm talking about!
But of course this works as any regular granola for breakfast!
Why do we use egg whites to make Granola?
It sounds a little strange at first, but using whisked egg whites is the ultimate healthy food hack. In a standard recipe, oil and sugar create a "slurry" to stick the oats together, but this recipe is a little different - the egg whites act as a protein-based glue. As they bake, the whites expand and then harden, creating those giant, shattered granola clusters we all crave without any of the greasy residue.
Beyond the crunch, using egg whites is a total game-changer for your macros. Swapping the oil drops a lot of the calories, so you can enjoy a much larger portion of this healthy egg white granola while still hitting your goals.

Why You Will Love This
Making your own granola is going to completely change how you prep your breakfasts. Here is why you'll be obsessed:
- Massive Crunch: The protein binds everything together for the ultimate, giant egg white granola clusters.
- Zero Oil: A truly egg white granola (no oil) recipe that gets perfectly crisp in the oven without the extra fat.
- Low Fat: There's no oil, just only healthy fats from the nuts and chia seeds.
- No Dairy Granola: It's got no butter like a lot of other recipes.
- Highly Customizable: Swap the nuts and seeds to fit whatever mix-ins you currently have, for different variations.
- Low Sugar: Naturally sweetened with a bit of maple syrup, and easily adaptable to be an egg white granola no sugar treat by using a sugar-free syrup.
Ingredients for Oil-Free Egg White Granola
Here is what you'll need to make this egg white granola healthy and delicious. These simple pantry staples work together to create the perfect macro-friendly crunch:
- Rolled Oats: Make sure to use Old Fashioned Rolled Oats. They have the surface area needed for the egg whites to cling to. Avoid quick oats, as they tend to turn mushy in an egg white granola no oil recipe.
- Sub: Use certified gluten-free oats if needed.
- Puffed Rice Cereal: This is my "volume" hack! It adds a major crunch and lightness to the mix without adding many calories or carbs.
- Sub: Use more oats, or even cereal like Cheerios or Rice Chex.
- Sliced Almonds & Chopped Cashews: These provide healthy fats, extra crunch and a rich, toasted flavor that balances the sweetness of the syrup.
- Sub: Use peanuts, hazelnuts, pecans, walnuts or any other nuts or seeds.
- Chia Seeds: A boost of fiber and Omega-3s.
- Sub: Flax seeds or shredded coconut.
- Egg Whites: Our star ingredient! They replace the oil entirely, acting as the binder that creates egg white granola clusters while adding a boost of lean protein.
- Maple Syrup: Provides a natural sweetness and helps the granola caramelize in the oven.
- Sub 1: For an egg white granola no sugar option, you can swap this for a sugar-free maple syrup alternative like Lakanto.
- Sub 2: Honey or Agave syrup will work just as well!
- Cinnamon & Vanilla Extract: These two are essential for that classic, warm "bakery" aroma and flavor.

How to Make the Best Egg White Granola (Step-by-Step)
Follow these steps for the ultimate oil-free crunch!
Step 1: Prep Your Pan and Dry Base
Preheat your oven to 300°F (150°C). This lower temperature is key for an egg white granola recipe-it allows the oats to dehydrate and crisp up without burning the nuts and seeds.
In a large mixing bowl, toss together the dry ingredients - rolled oats, puffed rice, sliced almonds, cashews, chia seeds, and cinnamon - until everything is well-distributed.

Step 2: Whisk the Egg Whites Until Foamy
This is the most important part of the healthy egg white granola process! In a separate small bowl, combine your egg whites and the vanilla extract. Use a hand mixer or a whisk vigorously for about 1-2 minutes until they are completely foamy and look like bubbles. You aren't looking for stiff peaks, just a light, frothy consistency that will act as the "glue" for your clusters.

Step 3: Combine and Coat Thoroughly
Pour the maple syrup and your foamy egg whites over the dry oat mixture. Using a large spatula or spoon or spatula, fold the mixture together. Don't rush this - you need to make sure every single oat and seed is glistening and coated. If there are dry spots, you won't get those signature egg white granola clusters.

Step 4: The "Thick Layer" Spread
Transfer the mixture to your prepared baking sheet. Instead of spreading it out as thin as possible, keep the mixture relatively close together in a thick, even layer. Press down very gently with the back of your spatula. This "crowding" ensures that as the egg whites bake, they bind the ingredients into one giant granola brick.

Step 5: The Slow Bake (No Stirring!)
Pop the tray into the oven for 40 minutes. The Golden Rule: Do not stir the granola! If you stir it, you will break the protein bonds of the egg whites, and you'll end up with loose oats instead of clusters. Let it stay cooking until the edges are golden brown and the kitchen smells amazing.
Step 6: The Cooling Secret
The granola might still feel a tiny bit soft to the touch-this is normal! As it cools, the egg whites harden and turn into a crisp, crunchy shell. Let it sit completely undisturbed on the pan for at least 30 minutes.

Step 7: Break into Clusters
Once the granola is cold, use your hands to gently break the sheet into large chunks. Serve over Greek yogurt, with cold almond milk, or just grab a handful for a high-protein snack on the go!
Tips for the Best Egg White Granola Clusters
If you've struggled with loose, sandy granola in the past, this egg white granola recipe is your solution. Here is how to ensure big clusters:
- Whisk Until Foamy: Don't just stir the egg whites in! Whisking them until they are froamy and bubbly is the secret to a crunchy egg white granola. Those tiny air bubbles expand in the oven, creating a light, crisp texture rather than a hard, dense one.
- The "No-Stir" Rule: This is the hardest part; Leave it alone while it bakes. Stirring breaks the protein bonds before they've set, which will leave you with loose oats instead of chunks.
- Crowd the Pan: For egg white granola clusters, "crowding" is actually a good thing. Spread the mixture into a thick, even layer where the oats are all touching. This allows the egg white to "glue" the pieces together into one big sheet that you can break apart later.
- Cooling is Cooking: Your granola will still feel slightly soft when it first comes out of the oven. Don't worry! Let them sit; As the egg whites cool, they will harden into that signature crunch.
How to store this Granola:
Store your totally cooled granola with egg white in an airtight jar or container at room temperature. It will stay perfectly crunchy and fresh for up to two weeks!
If you're in the mood for sharing and not keep it at home, homemade granola makes a great gift.

Instructions
- Preheat and Prep: Preheat your oven to 300°F (150°C).
- Mix the Dry Base: In a large bowl, combine the rolled oats, puffed rice cereal, sliced almonds, chopped cashews, chia seeds, and cinnamon. Stir until the nuts and seeds are evenly distributed through the oats.
- Whisk the Egg Whites: In a separate small bowl, whisk the two egg whites and vanilla extract until they are foamy and light. This should take about 30 seconds with a hand mixer or 1-2 minutes of vigorous whisking by hand. This foam is what creates the "glue" for your clusters.
- Combine and Coat: Add the maple syrup and the foamy egg whites to the oat mixture. Use a large spoon to mix thoroughly, ensuring every oat and nut is completely coated in the egg white mixture.
- Spread in a Thick Layer: Transfer the mixture to your prepared baking sheet. Spread it out evenly in a thick layer. For the best crunchy clusters, keep the mixture relatively close together, mankind sure every part of everything is touching rather than spreading it too thin.
- Slow Bake: Bake for 40 minutes. You want a slow bake at a lower temperature to dry out the egg whites and crisp the oats without burning the nuts.
- The Secret "Set" Step: Remove from the oven and let the granola cool completely on the pan for at least 30 minutes. Do not touch or stir it while warm! The granola hardens and the clusters set as they cool.
- Break into Clusters: Once cold and crisp, gently break the sheet of granola into large, crunchy clusters. Store in an airtight container for up to two weeks.

Hi! I’m so excited to try this recipe! Can I use liquid egg whites in a carton?
Haylee Jane Monteiro says
Hi Jaclyn!
Absolutely! I use the liquid egg whites out of the carton as well 🙂
I actually would love to know what you think when you try it out
Leigh says
Which brand of puffed rice cereal do you suggest?
Haylee Jane Monteiro says
Hi Leigh! I use the one from Nature's Path (https://amzn.to/4vXvU37) or Arrowhead Mills (https://amzn.to/4gxZ1oO)!
I can't wait to know what you think of this recipe when you try!
Hannah says
I've been in search of sugar free granola for my smoothie bowls and found it to be nonexistent or incredibly expensive in local stores and online. I decided to make my own! This is the first time I made granola myself and I will be using this recipe weekly! Very easy and very delicious!
Haylee Jane Monteiro says
Omigosh Hannah I'm so happy I was able to help you out here! <3 You've got me wanting to make another batch myself coz that crunch is hard to beat!
Tyanne says
I loved this recipe! Great for if you only have an egg white leftover and need to use it up. I put white chocolate on the top of mine and it was glorious ?
Haylee Jane Monteiro says
This makes me so happy to hear! Definitely is a much better use-case for an egg white than just a plain omelette haha.
That white chocolate really does sound heavenly - on my list for next time!
Min says
This looks really good! Do you think adding some protein powder before baking would work?
Haylee Jane Monteiro says
Hi Min!
You could actually try swapping out the maple syrup for protein powder. Would you be interested in a proper recipe for this? I'm actually considering putting one together!
Let me know!
Joyce says
Can I make these into bars instead of clusters
Haylee Jane Monteiro says
Hi Joyce, you could try shaping them into bars on the baking sheet and then baking them. Probably bake them for slightly longer so it's crunchy throughout. I'd say maybe start with 50-55 mins.
Jevay Aggarwal says
Okay I stumbled on this recipe while looking for something just to snack on and boy was I satisfied. Perfect crunch, perfect flavor 🙂 Adding this to my rotation for sure!
