An easy, healthy breakfast recipe - this protein-packed Baked Greek Yogurt is perfect breakfast or a post-workout snack. With a handful of ingredients, this recipe is a great meal prep protein yogurt bake for weight loss.

I had the hardest time finding a name for this recipe. There was protein yogurt bake, baked protein yoghurt, baked Greek yogurt and whatnot; Finally went with the Baked Greek Yogurt because it seemed like a good one for SEO purposes, haha. Maybe more people search for it?
A little funny story here - I put the recipe into one big ramekin after a lot of back and forth with my husband about whether to make a large single serve recipe or two small ones. It took SUPER long to bake so I decided to cover it with foil partway. MAJOR wrong decision there since it rose so much, it touched the foil. I did remove the foil when I saw this, and let it cook longer.
Took it out and it was GINORMOUS! Husband actually used quite some words of shock. I was very relieved that it cooled and settled down, coz otherwise it was like a giant crossover between a souffle and popover lol.
Either way, this low calorie low carb gluten-free healthy baked yoghurt recipe is going to change your breakfast game!

Ingredients for Baked Greek Yogurt Recipe:
This easy baked Greek yogurt recipe requires just a handful of wholesome essentials, making it ideal for anyone aiming to eat clean or stick to a low-carb diet.
- Nonfat Plain Greek Yogurt or regular yogurt
- Vanilla Protein Powder - this makes for an extra high protein yogurt bake.
It also serves as the sweetener in place of sugar; I used the vanilla protein powder from Quest for this recipe since it's a whey-casein and bakes well.
TIP 1: Make sure you use a whey-casein protein powder since it works best for this recipe. If you use whey protein, avoid the milk.
TIP 2: Use a protein that is actually sweet and whose taste you enjoy. This will determine what your result tastes like. Add some sweetener if needed.
- Sub: For a non-protein powder recipe, use sweetener like maple syrup, honey, stevia or monkfruit. Avoid the milk or start with only a little until you get the appropriate texture (like in the video)
- Sub: Use whey protein powder. Skip the milk in this case.
- Some Cornstarch
- Sub: Use tapioca starch or arrowroot starch.
- Sub: Use tapioca starch or arrowroot starch.
- Unsweetened Almond Milk to thin out the batter, or a splash of cream for a richer result.
IMPORTANT: Don't use this if you are using whey protein.- Sub: Use any plant-based milk like oat, coconut, or cashew milk instead of almond milk.
Regular milk works just as well.
- Sub: Use any plant-based milk like oat, coconut, or cashew milk instead of almond milk.
- An Egg

How to Make Healthy Baked Protein Yogurt Recipe at Home:
Follow these simple steps to make your own high protein and healthy baked yogurt recipe at home:
- Start Mixing the Base: Grab a large mixing bowl and toss in your Greek yogurt and egg.
Don't worry about being too precise-just whisk them together until it looks creamy and smooth. The idea here is to blend the two without leaving any lumps of egg floating around.
- Add the Dry Ingredients: Now, sprinkle in your vanilla protein powder and cornstarch. Take your time stirring these in, but don't go overboard with the mixing. You want everything to come together into a smooth batter, but over-mixing can mess up the texture once it's baked. Think "smooth and velvety" rather than "whipped into oblivion."

- [IF NEEDED] Adjust the Consistency (with Milk): If your batter feels too thick-like it's not easily pourable-go ahead and add 2 tablespoons of almond milk. Stir it in gently until the batter loosens up a bit. You're aiming for a consistency that's thick but still easy to pour into the ramekins.
- Optional Add-Ins: fold in a cup of berries of choice (fresh or frozen both work) or chocolate chips. Don't overdo it-just a light stir to distribute them evenly without crushing the berries.

- Prep the Ramekins and Fill: Take a large ramekin (or a small baking dish) and spray it/them with non-stick cooking spray to prevent sticking. Carefully pour the batter into the ramekins, smoothing the top with a spatula or the back of a spoon. This will give you that nice, even surface when it bakes.
- Bake Time: Pop the ramekins into your preheated oven (350°F). If you're using a larger ramekin, bake for about 30 minutes. For smaller ones, reduce the bake time and check for doneness at around 20 minutes.
The key is to look for a center that's slightly jiggly when you give it a gentle shake-kind of like a firm but wobbly pudding. - Cool and Serve: Once they're done, take the ramekins out and let them cool for at least 30 minutes (I prefer letting it cool, and even setting it in the fridge for an hour or so) before enjoying your protein-packed breakfast or post workout treat!

Tips for this Baked Greek Yogurt Dessert
As you can imagine, this baked Greek yogurt dessert is as easy as it comes, but here are some pointers to get it right.
- Protein powder flavor: Use a protein that is actually sweet and whose taste you enjoy. This will determine what your result tastes like. Add a touch of sweetness if needed.
- Use Whey-casein protein powder: Make sure you use a whey-casein protein powder since it works best for this recipe. If you use whey protein, avoid the milk.
- Don't over-mix: Over-mixing can result in a dense texture. Stir just until the ingredients are combined.
- Adjust sweetness: Taste the mixture; If you prefer a sweeter flavor, add a teaspoon of honey, maple syrup, or stevia to the batter.
- Add milk if needed (little at a time): You're aiming for a consistency that's thick but still easy to pour into the ramekins. Add the milk only if needed, and a little at a time.
- Check doneness: The center should jiggle slightly when the yogurt is baked correctly. Overbaking can make the protein yogurt bake dry.

How to store Protein Yogurt Bake?
This low-carb protein yogurt bake is perfect for a quick meal prep and can be stored for later enjoyment:
- Refrigerator: Store in an airtight container for up to 3 days. Enjoy cold or reheat in the microwave for 20-30 seconds.
- Freezer: Freeze in individual portions for up to 2 months. Thaw overnight in the refrigerator before reheating.
Cover and Seal: To prevent your baked protein yoghurt from absorbing any unwanted odors or flavors from the fridge, cover it tightly with plastic wrap or aluminum foil. Make sure to seal the edges well to create a protective barrier.
Variations to Make Your High Protein Baked Greek Yogurt
One of the best things about this recipe is how easily you can customize it to fit your cravings while keeping it high protein and sugar-free.
- Topped with Cream: A small dollop of whipped cream on top after baking makes this feel like more of a dessert.
- Protein Powder Flavors: Use different protein powder flavors! Caramel, chocolate, or peanut butter protein powder works beautifully in place of vanilla to create a whole new dessert-for-breakfast experience.
- Spiced Baked Yogurt: If you're feeling 'spicy', add a pinch of cinnamon, nutmeg or even cardamom to the yogurt mix before baking.
- Nut Butter Layer: For a more decadent treat, spread a thin layer of sugar-free nut butter on the bottom of the ramekin before pouring in the batter.
- Fruity Twist: Replace the optional chocolate chips with ⅓ cup of frozen or fresh berries - raspberries, blueberries, or diced strawberries - for a low-sugar mix in.
- Crunchy Mix Ins: Add in raisins, shredded coconut, other nuts or seeds.

Baked Greek Yogurt FAQ
Yes - made with nonfat Greek yogurt, an egg, and vanilla protein powder, it's naturally low fat, gluten free, and sugar-free, with over 46 grams of protein per serving.
Yogurt mixed with binders like egg and starch, then baked until it sets into a firm, custard-like texture - similar to a crustless cheesecake.
The proteins in the yogurt and egg firm up as they heat, turning the batter from pourable into a set, jiggly-but-firm custard.
Yes - pour the batter into a ramekin or small baking dish and bake at 350°F until the center is just set.
Mostly yes. The heat kills off most live active cultures, so this version won't retain the probiotic benefit of eating yogurt cold, though you still get the protein and texture.

Can you sub out the standard whey protein using casein whey?
Haylee Jane Monteiro says
Hi Juanita, I actually do use a whey-casein blend so that would be perfect!

I’m so glad I tried this recipe out and let it sit in the fridge overnight. I had it for breakfast the next morning and the texture was kind of like cheesecake. Definitely going to be trying this again, maybe with some berries and whip cream.

So happy you liked it!

This recipe was awful. It's not quite pudding, it's not quite bread, it's not quite a mousse, it's not tasty. What a huge disappointment and waste of ingredients. The only thing I changed was I added fresh blueberries but that didn't help. I ate mine because i don't like to waste food but my partner took one bite and into the garbage disposal!
Please stop posting horrible recipes.

Sounds exactly what happened to me except i didn't use the berries. You're braver than I am... I couldn't eat this without my stomach turning. I fall for these fake healthy recipes all the time and never learn!
Haylee Jane Monteiro says
Hi Jim, I’m so sorry to hear you had a similar experience and that it didn't agree with your stomach! I personally don't like wasting food either, and I completely get why you'd feel wary of "healthy hacks" after a bad experience.
Because this recipe relies so heavily on just a few staples, the final result depends entirely on the brand of protein powder used. If a powder doesn't taste amazing on its own, baking it unfortunately concentrates that artificial flavor.
The cooling process is also really important to keep it from feeling unappealingly warm or un-set. I’ve updated the notes to make sure readers know to let it cool for at least 30 minutes, or chill it in the fridge, so it sets into a proper custard texture. Thank you again for the honest feedback, and I hope your next healthy baking venture is much more successful!
Haylee Jane Monteiro says
Hi there, I am so incredibly sorry to hear this was a disappointment and that it felt like a waste of ingredients. I completely understand how frustrating that is!
Baked yogurt recipes have a very unique texture—it should settle into a custard or cheesecake-like consistency rather than a bread or mousse. Two huge factors that completely dictate the taste and texture are the specific protein powder used (since the flavor bakes right into the dish) and the cooling time.
I actually just updated the post to emphasize that these absolutely must cool for at least 30 minutes—or better yet, chill in the fridge for an hour—to let the texture properly set and the flavors come together. Eating it warm or before it sets can definitely give it an odd texture. I truly appreciate you sharing your experience so I could make the recipe instructions clearer for everyone!
Mollie says
Thank you for another delicious high protein recipe! I will totally be making this again. I added a little bit of Stevia for extra sweetness. I used a large ramekin, therefore I added 6 minutes to the baking time. I also added blueberries. Loved it! I think it tasted better cooled off than it did right out of the oven. Delicious!
Haylee Jane Monteiro says
I'm so happy you loved this Mollie!
I love the blueberry idea! This reminds me of the blueberry cottage cheese bake I made. You might really like this one! https://www.haylskitchen.com/high-protein-blueberry-cottage-cheese-bake/
P.S. Totally agree on the cooled version being better, haha.
Caroline says
Hi! I absolutely love your recipes. Do you think I could microwave this instead of bake it in the oven?
Haylee Jane Monteiro says
Hi Caroline!
SO sorry for the delay in getting back; I decided to give it a try in the microwave, and it the outcome wasn't as great as I would have liked.
I did the whole recipe in one bowl for 2 mins + 1 min, covered the bowl with a damp paper towel (which got a bit messy as the yogurt rose and touched it).
I believe the yogurt curdled and it had a bit of a chunky texture; It tasted a lot lot better out of the fridge cold the next day, but something was still a little off.
I would maybe try dividing the mix in 2 bowls and microwaving them one at a time for a minute.
Maybe even place the bowl in a bowl of water!
Overall though, I would say bake it if you can!
Maria says
Could you somehow incorporate an egg into this?
Haylee Jane Monteiro says
Hi Maria. This baked yogurt recipe already uses 1 egg!
Let me know if you have any other questions!
